Cosmopolitan Champagne Cocktail

Blend all ingredients except Champagne and chill for 6 hours
- 1 1/4 cup Cointreau or GM
- 1 1/4 cup cranberry juice
- 1/2 cup plus 2 tbsp fresh lime juice
- 3 tbsp of fine sugar
- 4 cups of champagne
3 Meat Meatballs

Makes 28 meatballs Combine beef, veal, and pork in a large bowl
- 1 pound lean ground beef
- 1/2 pound ground veal
- 1/2 pound ground pork
- 2 large eggs
- 1 cup freshly grated Pecorino Romano cheese
- 1 1/2 tablespoon chopped Italian parsley
- 1/2 small clove garlic, peeled and minced
- Kosher or sea salt, to taste
- Freshly ground pepper, to taste
- 2 cups fresh bread crumbs
- 2 cups lukewarm water
- 1 cup good quality olive oil, for cooking
- Your favorite marinara sauce

- 2 pounds short ribs, 1 3/4-inch long
- 2 tbsp vegetable oil
- 3 shallots, peeled and finely chopped
- 6 cloves garlic, peeled and crushed
- 1 cup ruby port
- 1 cup dry red wine
- 6 cups veal or beef stock
- 8 sprigs fresh thyme
- 2 bay leaves
