Ruth's Red Lettuce Salad
- Dressing:
- Bunch of red lettuce
- Mandarin orange segments /fresh of any small orange
- Sliced almonds 2 tbsp of sugar
- 2 tbsp sugar
- 2 tbsp cider vinegar
- 1/4 cup olive oil
- 1/2 tsp salt
- Pepper to taste
- 2 tbsp dry parsley
- Drops of tabasco
Chicken Waldorf Salad

- 1 green apple thinly sliced
- 1 bulb fennel thinly sliced
- 1 stalk celery sliced with a vegetable peeler
- 1 cup shredded cooked chicken
- sea salt and cracked pepper
- Walnut Dressing
- 40 g Butter
- 1/3 cup walnuts
- 2 tbsp sugar
- 2 tbsp white wine vinegar
Chocolate Coconut Bars

Mix first 3 ingredients and form into 12 small rectangles placing on parchment paper
- 2 cups sweetened coconut
- 3/4 cup sweetened condensed milk
- 1/4 tsp cinnamon
- 24 almonds, lightly toasted
- 8 oz dark chocolate 50% extra dark
- 2 tbsp vegetable oil
- 1/2 tsp Kosher Salt or Maldon Sea Salt
Cavolo Nero Salad

- 1 1/2 cups (100 g) lacinato kale, tough ribs removed and finely julienned
- 1 tbsp (15 g) pecorino, grated or finely shaved
- 1 tsp (5 g) toasted pine nuts
- 2 tsp (8 g) dried Zante currants
- 6 tbsp Lemon Vinaigrette
- 1 tbsp Parmesan, grated or finely shaved
- 5 tbsp olive oil
- 6 tbsp lemon juice
- 1/4 cup rice wine vinegar
- 1/4 tsp kosher salt

Macaroni Salad with Pancetta and Peas

Creamy with Thyme Dressing
- 12 oz salad size macaroni pasta, cooked and cooled
- 1 cup frozen petite peas thawed
- 4 oz diced and crisped pancetta
- 2 teaspoons of thyme leaves for garnish
- Creamy Lemon-thyme dressing( recipe attached)
Pepperoni Caprese Bites

In a medium glass jar, add all of the above ingredients and shake well
- Pepperoni Caprese Bites with Basil Vinaigrette
- Makes 24
- 24 Mini Mozzarella Balls
- 24 Basil Leaves
- 24 Slices of Pepperoni
- 24 Small Cherry Tomatoes
- 24 Toothpicks
- Thread the mozzarella ball first then fold the pepperoni in half and half again and thread onto the toothpick. Next add the basil leaf then the tomato.
- Basil Vinaigrette
- 1/3 Cup Olive Oil
- 1 Tablespoon White Balsamic Vinegar
- 1/4 teaspoon Garlic Powder
- 1 Scallion, finely minced
- 6 Basil leaves, chopped fine
- Pinch of salt
- 6 Grinds of Black Pepper

Directions Preheat oven to 475 degrees
- 6 1/4 cups all-purpose flour, plus more for work surface
- Pinch of salt
- 1/4 cup plus 2 tablespoons superfine sugar
- 1 heaping tablespoon baking powder
- 3/4 cup (1 1/2 sticks) unsalted butter, chilled and cut into pieces
- 4 large eggs
- 1 3/4 cups plus 2 tablespoons milk
- Granulated sugar, for sprinkling

- Crust
- 28 chocolate wafers such as Nabisco Famous, finely ground in a food processor (1 1/2 cups)
- 3/4 stick (6 tablespoons) unsalted butter, melted and cooled completely
- Filling: 1/2 lb bittersweet chocolate 60% coarsely chopped
- 3/4 stick butter 6tbsp cut into cubes
- 2 large eggs lightly beaten
- 1/3 cup heavy cream
- 1/4 cup granulated sugar
- 1/4 tsp salt
- 1 tsp pure vanilla extract
- Need a spring form pan and cocoa powder for dusting /raspberries and whipped cream optional
