- 1 cup canola oil
- 1 cup milk
- 4 tbsp. lemon juice
- zest of two lemons
- 1 1/4 cup white sugar
- 2 cups grated zucchini (I also peeled mine, but this is optional.)

- 1 tbsp (15 mL) chopped green onion
- 1/2 cup (125 mL) roasted unsalted cashew nuts

- 2 tsp (10 mL) cornstarch mixed with
