CARMELIZED ONION STUFFED BURGERS W/FETA CHEESE SAUCE

I was given a recipe for onion stuffed burgers, that called for a slice of raw onion to be placed in the middle
- Feta Sauce:
- 4 oz crumbled feta cheese
- 4 oz cream cheese
- 1/4 cup Greek Yogurt
- 1/4 cup seeded, chopped Jalapeno
- peppers
- 1 scallion, sliced (white and green
- parts)
- Burgers:
- 2 lbs ground chuck
- 1 large red onion
- 1 Tbs fresh chopped garlic
- 1 Tbs olive oil
- 1 tsp granulated sugar
AVOCADO FETA SALAD WRAPS

Black olives are a nice addition
- 1 ripe avocado, seeded and diced
- 1/2 cup crumbled feta cheese
- 2 tsp. fresh lime juice
- Freshly ground black pepper to taste
- 1/2 cup sliced scallions
- 2 Tbs. soy "bacon" bits
- 1/4 cup sunflower seeds, preferably
- toasted
- 2 Tbs. fat-free soy mayonnaise
- 16 grape tomatoes
- I cup shredded leaf lettuce plus half
- head for garnish
- 4 8-inch low-fat plain or flavored
- flour tortillas
ALMOND RICE PILAF

- 1 tbs butter
- 1 small onion, chopped
- 1/4 tsp ground corriander
- salt/pepper
- 1 cup long grain rice
- 14 1/2 oz chicken broth
- 2 tbs chopped parsley
- 1/4 cup sliced almonds, toasted
BLACK BEAN CHILI

A favorite vegetarian dish; can substitute any bean you prefer
- 3 15 oz. cans black beans
- 1 large sweet onion, chopped
- 1 12 oz. pkg meatless burger crumbles
- 2 tbs veg oil
- 4 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp pepper
- 1/4 tsp salt
- 14 oz veg broth
- 2 14 oz cans diced tomatoes (or 4 large chopped tomatoes)
- Toppings: sour cream, shredded cheese, lime wedges, sliced jalapenos, cilantro, corn chips
BAKED THREE CHEESE ZITI

A family favorite. Worth the trouble
- 2 tomatoes, quartered
- 2 onions, quartered
- 1/4 cup plus 1 tbs olive oil, divided
- 12 oz ziti or penne pasta
- 1 tsp salt, divided
- 2 tbs chopped garlic
- 3 tbs chopped shallots
- 1/2 cup white wine
- 2 cups heavy whipping cream
- 1/2 cup grated Fontina cheese
- 2/3 cup crumbled Gorgonzola cheese
- 1 cup finely grated Parmesan cheese
- 1/2 tsp ground pepper
- Chopped parsley
TOFU ENCHILADAS

- O. 2 pounds firm tofu
- O. 1/3 cup soy sauce
- O. 2 tablespoon tomato paste

BASIL CRUMB MACARONI AND CHEESE

Family favorite. You can substitute the basil for other herbs; have used thyme and a mixture of Italian herbs
- 1/2 lb elbow macaroni
- 3 tbs unsalted butter
- 2 tbs all purpose flour
- 2 cups whole milk, warmed
- 1/2 cup chicken broth, warmed
- 3 oz fontina cheese, shredded
- 3 oz white Cheddar, shredded
- 3 oz white American cheese, shredded
- 3 tbs parm cheese, grated
- 2 tsp yellow mustard
- 1 tsp Worcestershire sauce
- Salt, pepper, nutmeg and tabasco to taste

- 2 slices soft white bread
- 10 leaves fresh basil
- 1 tbs olive oil
BRINED HERBED PORK CHOPS

Brining the meat ensures the chops are moist and juicy and it only takes thirty minutes
- 4 boneless center-cut pork chops, approx 1 inch thick
- 3 cups herb bread crumbs
- 1 tbs garlic powder
- 2 tbs olive oil
- 3 tbs fresh grated Parmesan cheese or 2 tbs of that finely grated stuff
- 1/2 all purpose flour, divided
- 2 large egg whites
- 1.5 tbs Dijon or stone ground mustard
- 1 tbs heavy cream
STUFFED SHELLS WITH EGGPLANT SAUCE

This sauce is very versatile and an easy way to get extra vegetables in your diet
- Sauce
- 8 plum tomatoes, halved
- 1/2 cup sundried tomatoes in olive oil, chopped
- 1 medium eggplant, peeled, finely diced (about 6 cups)
- 1 red bell pepper, finely diced
- 4 tbs olive oil, divided
- 1 small onion, finely diced
- 4 Tbs chopped fresh garlic
- 8 oz mushroom, diced
- 1 tablespoon salt
- Freshly ground black pepper
- 1 tablespoon dried basil
- 2 (28-ounce) can Italian crushed tomatoes
- 1 (8-ounce) box manicotti shells
- Filling
- 1 cups shredded mozzarella cheese, divided
- 1 (15-ounce) container whole milk ricotta cheese
- 1/2 cup grated Parmesan cheese
- 3 Tbs fresh chopped basil
- 2 large eggs, slightly beaten
- 1/2 cup capers (optional)
- 8 oz fresh mozzarella, thinly sliced
- Salt and pepper to taste
BABY PEAS WITH BACON AND LEEKS

This recipe is a little time consuming for a side dish and calls for fried leeks
- 3 large leeks, white and tender
- green parts only, sliced
- crosswise 1/4 inch thick and
- separated into rings
- Vegetable oil, for frying
- Salt and freshly ground pepper
- 6 slices thick-cut bacon
- 4 thyme sprigs
- 1 cup Rich Turkey Stock
- (recipe, p.184) or low-sodium
- chicken broth
- 3/4 cup heavy cream
- Three 10-ounce boxes frozen baby
- peas, thawed
- 1 teaspoon cornstarch mixed with
- 1 tablespoon water
