PAN SPICED TENDERLOIN WITH HONEY AND PEARS

This is an easy weeknight meal
- 1.5 lb pork tenderloin
- 2 Asian pears, sliced thin
- 2 slices thick bacon, cut into 1 inch cubes
- 1 Tbs chopped garlic
- 1 Tbs fennel seeds, ground
- 1/8 tsp Allspice
- 1/2 tsp Thyme Leaves
- 1/8 tsp black pepper
- 1/2 tsp kosher salt
- 1.5 Tbs honey
- 3/4 Cup chicken broth
GRILLED CRAB LEGS WITH PROVENCAL BUTTER

Keep your bib on and wipes handy
- 1/4 (1/2 stick) c. butter
- 1/4 c. olive oil
- 2 cloves garlic, minced
- 1/2 tsp. thyme
- 1/2 tsp. rosemary
- 1 1/2 to 2 Ibs. Alaska King crab legs; thawed if
- necessary
- Thickly sliced zucchini, red, bell pepper and eggplant
BUFFALO BAKED WINGS

Had recently moved and puppies had chewed the gas line to the grill
- 1 cup all purpose flour
- 1/2 tsp ground red pepper
- 1/2 tsp red pepper flakes
- 1/8 tsp thyme
- 1/4 cup melted butter or margarine
- 1/2 cup hot buffalo wing sauce
- Cooking spray
BROWN DERBY DRESSING FOR COBB SALDAD

PreparationBlend all ingredients together, except oils
- 1/4 cup red wine vinegar
- 1/4 teaspoon sugar
- 1 teaspoon freshly squeezed lemon juice
- 2 teaspoons salt
- 3/4 teaspoon freshly ground black pepper

- 1/4 teaspoon dry English mustard

LOW FAT CRAB CAKES

- Sauce:
- 1/2 ripe med California avocado, pitted and peeled
- 1 tbs low-fat mayo
- 1 tbs lime juice
- 1/4 tsp salt
- 1/4 tsp sugar (or substitute)
- 1 fresh jalapeno chile, including seeds, quartered lengthwise
- 1/4 cup fat-free (skim) milk
- Crab Cakes:
- 1 lb jumbo lump crabmeat, coarsely shredded
- 3 tbs low-fat mayo
- 1/4 cup minced chives
- 1 tbs lemon juice
- 1 tsp Dijon mustard
- 1/4 tsp black pepper
- 1/2 cup Panko crumbs
- 1 tbs unsalted butter
- 2 garlic cloves, smashed
- 1/2 tsp herbes de Provence
- 1/4 tsp salt
BAKED ZITI WITH FIRE ROASTED TOMATOES

1.Heat oven to 375°F. Cook and drain pasta as directed on box
- 2 1/2 cups uncooked ziti pasta (8 oz)
- 1/2 lb extra-lean (at least 90%) ground beef
- 1 large sweet onion, chopped (1 cup)
- 2 cloves garlic, finely chopped
- 1 medium zucchini, cut in half lengthwise, sliced 1/4 inch thick
- 1 can (15 oz) Muir Glen® organic tomato sauce
- 1 can (14.5 oz) Muir Glen® organic fire roasted diced tomatoes, drained
- 2 teaspoons chopped fresh oregano leaves
- 1/4 teaspoon coarse (kosher or sea) salt
- 1/4 teaspoon pepper
- 3/4 cup shredded mozzarella cheese (3 oz)
SEA BASS WITH PINEAPPEL AND BASIL GLAZE

- 2 tbsp. rice vinegar
- 1 tsp. fresh basil, chopped
- 1/8 tsp. crushed red pepper
