Pepper Grilled Fish Tacos

Any fish that can stand up to the grill will work for this recipe
- TOPPING:
- 1 pound firm white fish, skinned
- 1 tablespoon olive oil
- 1 tablespoon melted butter
- 1 teaspoon fresh ground black pepper
- 1/2 teaspoon ground white pepper
- Pinch ground red pepper
- 1 teaspoon kosher salt
- 1/4 teaspoon cumin
- 1 fresh lemon, or lime
- 8 (10-inch) soft tortillas
- Chopped tomatoes
- Black olives
- Fresh cilantro
- Sour cream
- Shredded lettuce
- Thinly sliced onions
- Chopped avocado
- Salsa
SALT BAKED FISH

Serve left over fish in salad with fresh squeezed lemon
- 2 tbs coriander seeds
- 1 tbs black peppercorns
- 1 tsp fennel seeds
- 1 3 lb whole fish, cleaned, scaled, fins removed
- (Whitefish or salmon)
- 1 cup thinly sliced leeks
- 1 lemon, thinly sliced
- 2 large egg whites
- 1/4 cup water
- 2 26.5 oz sea salt (6 cups)
- Extra Virgin Olive Oil
- Lemon Wedges
BUTTERNUT SQUASH SOUP

This type of squash is incredibly difficult to cut; use an electric knife
- 1 butternut squash, 4 pounds
- 1 medium yellow onion
- 1 tablespoon unsalted butter or olive oil
- 1 tablespoon honey
- 6 sage leaves
- Salt
- Freshly ground black pepper
- 4 cups chicken stock
- 1 cup creme fraiche
TEXAS RED CHILI

Toast dried chiles in a dry skillet over medium-high heat until fragrant and blistered, 2 to 3 minutes per side
- 6 to 8 whole dried chiles (5 ancho and 3 guajillo or all ancho; about 3 ounces)
- 3 tablespoons canola oil, plus more as needed
- 3 pounds trimmed beef chuck, cut into small pieces (1/2 inch or smaller)
- Coarse salt and freshly ground pepper
- 2 large onions, coarsely chopped (4 cups)
- 7 to 8 garlic cloves, minced (5 tablespoons)
- 2 jalapeno or serrano chiles, seeded if desired, minced
- 2 1/2 teaspoons ground cumin
- 1 1/2 teaspoons dried oregano
- 1 can (28 ounces) whole peeled plum tomatoes, pureed with their juice (3 1/2 cups)
- 4 cups water, plus more if needed and for soaking
- 2 to 3 teaspoons white vinegar, to taste
WINE VINAIGRETTE

1. Combine vinegar, shallot, mayonnaise, mustard, salt, and pepper to taste in small nonreactive bowl
- 1 tablespoon wine vinegar (see note)
- 1 1/2 teaspoons very finely minced shallot
- 1/2 teaspoon regular or light mayonnaise
- 1/2 teaspoon Dijon mustard
- 1/8 teaspoon table salt
- Ground black pepper
- 3 tablespoons extra-virgin olive oil
CUBANO SANDWICHES

1.Preheat oven to 425 degrees
- 3 tablespoons butter, room temperature, plus more for pan
- 4 Portuguese rolls, split
- Yellow mustard, to taste
- 1/2 pound thinly sliced deli ham
- 1 pound Spice-Rubbed Pork Loin with Acorn Squash, thinly sliced (omitting acorn squash)
- 1/2 pound Swiss cheese, thinly sliced
- sliced dill pickles, to taste
Cauliflower Soup

Cauliflower is rich in vitamins C, B and K
- 1 head cauliflower
- 1 medium onion
- 2 cups chicken broth plus warm 1/2 cup heavy cream and 4 tablespoons butter
- Salt and pepper, to taste
- 4 tablespoons flour
- 2 cups whole milk
- 14 ounces white cheddar cheese, cubed
