- 1 egg, beaten
- 1 cup milk
- 1 medium onion, chopped
- 2 tbs dried parsley
- 1/2 cup buttered breadcrumbs
CARROTS WITH GINGER AND HONEY

- 1 cup chopped onion
- 3 eggs
- 3 tbs poultry seasoning

- 2 containers fresh oysters, drained and chopped,

THREE CHEESE FUSILLI WITH PEPPERS

THREE CHEESE FUSILLI AND RED PEPPERS
- 4 tbs butter
- 1 tsp salt
- 3/4 cups Fontina cheese
- 1/2 cups mozzarella, grated
- 1/2 tsp black pepper
- 2 red bell pepper, cut into thin strips
- 1 lb fusilli
- 1/2 cup grated Parmesan cheese
CAULIFLOWER AND BROCCOLI FLAN

- 2 1/2 cups cauliflower florets
- 2 1/2 cups broccoli florets
- 2 6 oz bags baby spinach leaves
- 6 tbs (3/4 stick) butter
- 1/4 cup all-purpose flour
- 2/3 cup whole milk
- 2/3 cup freshly grated Parmesan cheese
CHIPOLTE BARBCUE SAUCE

- 1/4 cup Chipotle puree (below)
- � 1/2 cup cider vinegar
- � 1 quart ketchup
- � 1/4 cup soy sauce
- � 1/4 cup molasses
- � 1/4 cup lightly packed light brown sugar
- � 2 teaspoons granulated garlic
- � 2 teaspoons granulated onion
- � 2 teaspoons black pepper
- � 1 teaspoon white pepper
- � 1/2 cup orange juice
KANSAS CITY SWEET COLA BBQ SAUCE

Melt the butter in a heavy 4-quart saucepan over medium heat
- 4 Tbs. unsalted butter
- 1 large onion (9 oz.), chopped
- 4 cloves garlic, chopped
- 1 can (12 oz.) cola
- 1 cup tomato ketchup
- 3 Tbs. tomato paste
- 1/2 cup cider vinegar
- 1/2 cup firmly packed brown sugar
- 1/4 cup Worcestershire sauce
- 2 tsp. ground ancho chile powder or New Mexico chile powder
- 1 tsp. ground white pepper
- 1 tsp. kosher salt
SQUASH CASSEROLE

Place the squash, onion, salt, and pepper in a large saucepan
- 2 pounds yellow squash, cut in 3/4-inch cubes
- 1 cup chopped onion
- 1 teaspoon salt
- 1/4 teaspoon freshly ground pepper, or to taste
- water
- 4 tablespoons butter
- 1 cup saltine crackers, crumbled
- 1/2 cup milk
- 1 cup shredded Cheddar cheese
- 1/2 cup pecans, finely chopped, or buttered bread crumbs
FETTUCCINE WITH WILD MUSHROOMS AND HERBS

If you prefer a thinner pasta, use angel hair
- 1 oz dried porcini mushrooms
- 3 tbs butter
- 4 shallots, finely chopped
- 2 pinches salt
- 1 clove garlic, minced
- 1 tbs chopped fresh marjoram
- 2 tsp tomato paste
- 1 lbs mixed fresh mushrooms, wiped w/wet cloth and coarsely chopped
- Generous pinch of pepper
- 2 tbs flour
- 1 cup beef broth
- 1/2 cup dry white wine
- 1 1/2 lbs fresh fettuccine or 1 lb dried
- 3/4 cup Parmesan cheese
CHEESE SCALLOP POTATOES

- 3 cloves garlic, smashed and peeled
- Salt
- 3 lbs baking potatoes, peeled and sliced 1/4 inch thick
- 3 oz Gryere cheese, coarsely grated (about 3/4 cup)
- Pinch red pepper
- Black pepper
- 1 cup heavy cream
