CHIPOTLE MEAT LOAF

This is a very spicy version of meat load; not Habenaro hot, but definitely jalapeno hot
- FOR LOAF:
- 2 Tbs olive oil
- 1 medium yellow onion, chopped (about 1.5 cups)
- 1 small red bell pepper, chopped (3/4 cup)
- 3/4 cup diced portabella mushrooms
- 2 Tbs chopped fresh garlic
- 1/2 cup Port or dry red wine
- 4 oz. Italian bred cut into about 2 inch pieces
- (about 2.5 cups)
- 1 cup whole milk
- 3/4 lb Italian sausage
- 1 1/4 lb ground sirloin
- 2 large eggs
- 1/2 cup grated smoked Gouda
- 1.5 Tbs finely chopped jalapeno pepper, seeds removed
- 2 Tbs fresh chopped sage
- 2 Tbs fresh thyme leaves
- 2 tsp chopped or ground fennel seeds
- 1/2 tsp ground allspice
- 1 Tbs Worchestershire Sauce
- Kosher Salt
- Ground black pepper
- FOR TOPPING:
- 1 Tbs ketchup
- 1.5 Tbs chopped chipotle in adobo sauce
- 1 Tbs tomato paste
- 2 Tbs maple syrup

- 3 tbs catsup
- 2 tbs worchestershire

SPICY REMOULADE

- 1/4 cup Creole mustard
- 2 tbs chopped parsley
- 1 tbs lemon juice
- 2 tsp Hungarian Paprika
- 1 garlic clove, pressed

- 2 1/2 lbs ripe tomatoes
- 3 tbs chopped parsley
- 2 tbs chopped garlic
- Salt/Pepper
- 1/4 cup extra-virgin olive oil
CEDAR PLANK LOBSTER TAILS

- 8 Tbs. (1 stick/125g) unsalted butter,
- at room temp
- 1 Tbs. potlatch seasoning'

- MARINADE:
- 2 8 oz yellow fin tuna steaks
- 1 cup soy sauce
- 1/2 cup lemon juice
- 1 clove crushed garlic for each steak
- 4 tbs olive oil

- 1/8 teaspoon red-pepper flakes
- 1/4 teaspoon sesame oil
- 1 scallion, green part only, thinly sliced

- 3 tablespoons unhulled white sesame seeds

- 1 pound sushi-grade yellowfin tuna, cut into 4-ounce rectangular pieces

- 2 lbs jumbo shrimp in shell (24-30), thawed completely if frozen
- and blotted dry
- 1/4 cup vegetable or olive oil
- 2 tbs Old Bay
- 1/2 cup salted butter, melted
- Ingredients for Sauce:
- 2 cups tomato ketchup
- Grated zest of 2 small lemons
- Juice of both lemons (5 tbs)
- 4 tbs prepared horseradish
- 8 shakes Tabasco
- 1/2 tsp sea salt or kosher salt
