PASTRY - Doughnuts 2

- 500 g high protein flour
- 50 g milk powder
- 100 g castor sugar
- 75 g butter
- 3 egg yolks
- 2 tsps instant yeast
- 225 ml water
CAKE - Old Fashioned Lemon Butter Cake

Preheat oven to 325 degrees F
- CAKE:
- 1 cup unsalted butter, at room temperature
- 2 cups granulated sugar
- 4 large eggs, at room temperature
- 3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- Grated zest of 2 large lemons
- Juice of 1 large lemon (about 2 1/2 tablespoons)
- For the Glaze:
- 2 cups confectioners sugar
- Juice of 1 large lemon (about 2 1/2 tablespoons)
KUIH - Kuih Seri Muka

1. Soak rice for at least 2 hours
- OR to play around with using cup:
- (A)
- 300 gm glutinous rice
- 50 ml coconut milk
- 200 ml water
- 1 tsp salt
- (B)
- 150 ml eggs (3 medium, grade B or C)
- 150 ml coconut milk
- 150 ml pandan juice
- 180 gm sugar
- 15 gm cornstarch
- 30 gm all purpose flour
- Rice : 1cup
- Coconut milk: 2 Tbsp
- Salt: 1/2 tsp
- Water: Just put enough to be slightly above rice, say about.... 3mm
- Eggs: 2 Large, A grade
- Liquid (no matter how much the ratio of coconut milk and pandan juice) : 1 cup
- Sugar: 1/2 cup
- Flour : 1 heaped Tbsp
COOKIES - Milan Cookies

Make the cookies: Center an oven rack and preheat the oven to 350F
- For the cookies:
- 6 oz unsalted butter, softened
- 2 1/2 cups (11 oz) powdered sugar, sifted
- 7/8 cup egg whites (210 ml), room temperature
- 1 tbsp pure vanilla extract
- For the lemon cookies:
- 1 tbsp pure lemon extract
- 3/4 cup all-purpose flour
- For the coconut cookies:
- 1 tbsp pure coconut extract (optional)
- 1/2 cup all-purpose flour
- 1/4 cup ground unsweetened coconut
- For the white chocolate-raspberry ganache (adapted loosely from Sherry Yard’s white chocolate ganache):
- 6 oz good quality white chocolate, very finely chopped
- 3 tbsp (45g) unsalted butter, cut into small pieces, softened
- 2 tbsp whipping cream
- 2 tbsp fresh raspberry puree
- 1 tbsp light corn syrup
- Scant 1 tbsp Chambord
- A drop of red food coloring (natural preferred), optional, if you wish to enhance the color. I didn’t use it.
- For the dark chocolate-coconut ganache:
- 4 oz bittersweet or semisweet chocolate, very finely chopped
- 1 tbsp (15g) unsalted butter, softened
- 1/4 cup unsweetened full-fat coconut milk
- 1 tbsp light corn syrup
- 1/2 tbsp dark rum
CAKE - Mini Coconut Muffin

Preheat oven to 180°C. Line 24 mini muffin cups with paper cups
- 1 cup Desiccated coconut
- 1 tbsp Brown sugar
- 6 tbsp Melted butter
- 1 cup all-purpose flour
- 1/3 cup sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp Salt
- 1 Egg
- 1/3 cup Coconut milk
- 4 tbsp Milk
- 1/2 tsp Lemon zest
COOKIES - White Chocolate and Macadamia Cookies

Preheat the oven to 180°C/fan 160°C/gas 4
- 125 g butter, softened
- 85 g soft light brown sugar
- 1 tsp vanilla extract
- 1/8 tsp salt
- 1 large egg yolk
- 150 g Plain flour
- 75 g White chocolate chopped
- 50 g macadamia nuts
CHEESECAKE - Matcha Rare Cheesecake

Crush the cracker with the rolling pin
- 50 g Butter (soft)
- 80 g Graham crackers
- A pinch of salt
- 70 g Sugar
- 5 g Gelatin
- 2 tsp Matcha (Japanese Green tea powder)
- 150 ml Whipping cream
- 200 g Cream cheese
- 100 g Sour cream
- 20-27 Sweeten boiled kidney bean (plus more for decorating)
- Dark chocolate for decorating
ICE CREAM - Red Bean Ice Cream

1) Beat sugar and egg yolks in a large bowl until it's pale and yellow then set aside
- 1/2 cup sugar
- 3 egg yolks
- 1 cup milk
- 1 1/2 cups sweetened red bean paste
- 1 1/2 cups heavy whipping cream
CAKE - Cheddar Cheese Marble Cake

Melt butter using double boiling method
- 8 grade A eggs (use only 6 egg whites)
- 250 g butter (i used unsalted butter)
- 250 g caster sugar
- 220 g cake flour
- 100 g cheddar cheese (grate)
- 30 g hazelnut (chop) - (optional)
- 1 tsp baking powder
- 1 tbsp ovalette
- 1 tsp vanilla extract
- 1 tbsp cocoa powder
- 1 tsp chocolate paste/emulco (optional)
- 1/8 tsp salt (i added)
CHICKEN - Braised Chicken Wings with Black Fungus

- Ingredients:
- 900 gm chicken wings
- 1/2 carrot, sliced
- 8 to 10 dried cloud ears
- 4 to 5 slices ginger
- 1 stalk spring onion, chopped, the green and white part separated
- 1/2 cup water
- Marinade:
- 2 tsp light soy sauce
- 2 tsp dark soy sauce
- 2 tsp oyster sauce
- 2 tsp Shaoxing wine
- 1/4 tsp sugar
- 1/8 tsp salt
- pepper, to taste
