SOUP - White Bean and Roasted Garlic Soup

To start the soup, cut the celery into medium-dice pieces
- 1 large stalk celery or 2-3 small stalks celery
- 1 tbsp extra virgin olive oil plus 1 tbsp (light) olive oil
- Pinch red pepper flakes
- 2 cups cooked white beans
- 2 cups chicken stock
- 1 head roasted garlic
- 9-12 large shrimps
- Unrefined sea salt to taste
- Parsley, for garnish

- CAKE:
- 4 Eggs
- 125 g Caster Sugar
- 125 g Plain flour
- 50 g White Chocolate, finely grated
- ICING:
- 3 tbsps/2-3 drops rosewater or rose essence
- 150 ml crème fraîche
- 200 g White Chocolate , broken into pieces
- 75 g unsalted butter
- 3 tbsps single cream , at room temperature
- 125 g Icing Sugar
- White Chocolate curls to decorate

1 Preheat oven to 400°F. Using an electric mixer, beat the butter

CHICKEN - Steamed Chicken Rice (冬菇蒸雞飯)

Soak shiitake mushrooms in warm water until softened
- Ingredients:
- Prepare a round 17cm (6.5 inches) bowl
- 2 cups Jasmine rice (I used my electric rice cooker’s cup, about 300 grams)
- 500 gm chicken drumsticks and chicken wings (or chicken breast if you like)
- 8 shiitake mushrooms
- ginger, julienned, to taste
- spring onion, for garnish
- water, to cook rice
- Marinade for chicken:
- 1 1/2 tsp light soy sauce
- 1 tsp dark soy sauce
- 1/2 tsp sugar
- 1/2 tsp cornflour
- 1 tsp Shaoxing wine
- a pinch of white pepper
- a pinch of salt
- Marinade for mushrooms:
- 1/2 tsp light soy sauce
- 1/2 tsp sugar
- 1/2 tsp cornflour
- 1/2 tsp vegetable oil
PORK - Grilled Spice Ribs

- 4 meaty Ribs
- Spices to grind into paste:
- 5 Shallot
- 2 stalk Lemon Grass
- 1 thumb-size Turmeric
- 3 fresh Chilli

- 3 tablespoon Honey
- 1 tablespoon Sesame Seed Oil

COOKIES - Macadamia Shortbreads

1. Set a rack in the middle level of the oven and preheat to 160°C
- COOKIE DOUGH:
- 50 g sugar
- 25 g unsalted macadamia nuts, crushed with the bottom of a pan
- 140 g all-purpose flour
- 1/4 tsp baking powder
- 90 g cold unsalted butter, cut into pieces
- (I weigh and put it in the freezer when prepare other ingredients)
- A dash of salt
- TOPPING:
- 40 g unsalted macadamia nuts
- 30 g sugar
- A dash of salt
