BREAD - Good Old American White Rolls

In a small saucepan over medium heat, heat the milk and butter just until the butter is melted
- For the glaze (optional):
- 3/4 cup (175 ml) milk
- 1/4 cup (56 grams) unsalted butter
- 3 cups (375 grams) bread flour
- 1/4 cup (50 grams) sugar
- 1 teaspoon salt
- 2 1/4 teaspoons (One 1/4 ounce package) active dry yeast
- 2 large eggs
- 1 1/2 tablespoons (20 grams) butter
- 1 teaspoon honey
COOKIES - Lemon Pisachio Biscotti

- 1 1/2 cups shelled pistachios
- 1/2 cup unsalted butter
- 3 eggs
- 1 cup sugar
- 1 teaspoon vanilla extract
- Zest of 2 lemons
- 3 1/2 cups all-purpose flour

- 1/2 teaspoon salt*
PORK - Roasted Sweet Garlic Ribs

Blanch the ribs. In a new pot, add ribs and all the other ingredients except honey

- 2 Tablespoons Butter
- 2 whole Large Onions, Halved And Sliced Thin
- 1/4 cups Beef Broth
- 7 dashes Worcestershire Sauce
- Splash Of Red Or White Wine
- 1/2 cups Grated Gruyere Cheese (can Use Swiss)
- Kosher Salt
- 24 whole White Or Crimini Mushrooms, Washed And Stems Removed
- Minced Parsley
COOKIES - Sesame Cookies

1. Preheat oven to 375°F Prepare the baking sheet, by lining with the baking paper or Silpat
- 260 g all–purpose flour
- 100 g sugar
- 1/2 tbsp baking powder
- 1/2 tsp salt
- 60 g unsalted butter, at room temp.
- 60 g solid veg. shortening
- 1 large egg, at room temp.
- 1/2 tsp vanilla extract
- 1/2 tsp grated lemon zest
- 140 g unhulled sesame seeds
BREAD - Hokkaido Milk Loaf

1. Add ingredients into bread machine accordingly
- 270 g bread flour
- 30 g cake flour
- 5 g instant yeast
- 15 g milk powder
- 30 g sugar
- 1 pinch of salt
- 1/2 egg
- 125 ml fresh milk
- 70 g whipping cream
PASTA - Macaroni and Cheese

Cook macaroni until very firm
- 4 cups Dried Macaroni
- 1 whole Egg Beaten
- 1/4 cups (1/2 Stick Or 4 Tablespoons) Butter
- 1/4 cups All-purpose Flour
- 2-1/2 cups Whole Milk
- 2 teaspoons (heaping) Dry Mustard, More If Desired
- 1 pound Cheese, Grated
- 1/2 teaspoons Salt, More To Taste
- 1/2 teaspoons Seasoned Salt, More To Taste
- 1/2 teaspoons Ground Black Pepper
- Optional Spices: Cayenne Pepper, Paprika, Thyme
DESSERT - Thai Red Rubies Dessert

Put all the coconut milk syrup ingredients in a pot and bring to boil under medium to high heat
- Coconut milk syrup:
- Water Chestnuts Coating
- 500 grams of water chestnuts, de-skinned
- 250 grams of tapioca flour
- 1 About 1 tablespoon of red colouring
- 600 grams or ml of thick coconut milk
- 600 grams or ml of plain water
- 150 grams of castor sugar
- 10 pandan leaves, tie into knot
- Pinches of salt
SOUP - Hot and Spicy Soup

- 1/2 tablespoon Light Soy Sauce
- 1 teaspoon Ground Black Pepper
- Salt to taste

- Chilli Oil
- Chicken Breast meat, cooked and shredded
- Black Wood Ear aka Black Fungus, shredded
- Bamboo Shoots, shredded
- Carrot, shredded
- Shitake Mushroom, sliced
- Tofu, cut into strips

- 80 g ............................... Unsalted butter
- 130 g ............................. Dark chocolate (I use 57% Dark chocolate)
- 160 g............................. Granulated sugar
- 25 g ............................... Golden syrup
- ...................................... Pinch of salt
- 2 ................................... Eggs
- 50 g ............................... All purpose flour
- 17 g ............................... Cocoa powder
