1. Fry the yam until golden brown then drain well and set aside
- Sauce:
- 2 cups rice
- yam (cut into cubes size)
- Chinese dried mushroom (cut into thin strips)
- dried shrimp
- pork
- garlic (chopped)
- shallots
- spring onion
- 1 cube chicken stock
- water
- 1 tbsp oyster sauce
- 1 tbsp thick soya sauce
- 1 1/2 tbsp light soya sauce
- 1 tsp sesame oil
- dash of salt and white pepper
CAKE - Chocolate Hazelnut Cake

CAKE: Preheat oven to 350°
- CAKE:
- 6 large eggs, separated
- pinch of salt
- 1/2 cup unsalted butter, softened
- 14 ounces Nutella
- 1 tablespoon Frangelico, rum, water
- 1/2 cup ground hazelnuts
- 4 ounces bittersweet chocolate, melted and cooled
- ICING:
- 4 ounces hazelnuts
- 1/2 cup heavy cream
- 1 tablespoon Frangelico, rum, or water
- 4 ounces bittersweet chocolate
Bread - Overnight Soft Herb Rolls

In a large bowl, sprinkle yeast over 1/4 cup cool (70-degree) water
- 1 tablespoon active dry yeast
- 3 tablespoons sugar
- 1 teaspoon table salt
- 1 tablespoon EACH minced flat-leaf parsley, dill, chives and rosemary leaves
- 2 tablespoons butter, melted
- 1 egg plus 1 tablespoon lightly beaten egg

- 4 pieces Lean Pork
- 2 tablespoon 5-spice Powder
- 1 tablespoon Cooking Wine
- 1 1/2 tablespoon Light Soy Sauce

- 1/2 tbsp Garlic Powder
- 1/2 tbsp Soy Sauce
- Marinade:
- 2 tbsp Fish Sauce
- 1.5 tbsp Garlic Powder
- 0.5 tbsp Light Soy Sauce
- 0.5 tbsp dark Soy Sauce
- 1 tbsp Sugar
- 1 tbsp Mirin / Rice wine

- Dried cranberries 35g
- Almond flakes 35g (toasted)
- Low protein flour 100g
- Baking powder 1/4tsp
- Icing sugar 35g
- Ground almond 15g
- Corn flour 15g
- Shortening/butter(cold, cut into cubes) 50g
- Egg white 25g
ICE CREAM - Green Tea Ice Cream
