Lemon Garlic Mushrooms

For dressing, whisk together first five ingredients
- 1/4 cup lemon juice
- 3 tablespoons minced fresh parsley
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- Pepper to taste
- 1 pound large fresh mushrooms
Oven Fried Zucchini Spears

Preheat oven to 475F. On shallow plate, combine all ingredients except zucchini and oil; set aside
- 1/2 cup seasoned dried bread crumbs
- 2 Tbsp. grated Parmesan cheese
- 1/8 tsp. garlic powder
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/2 tsp. parsley
- 1/8 tsp. freshly groung black pepper
- 1/8 tsp. paprika
- 2 medium zucchini (about 12 oz.)
- 2 Tbsp. olive oil
- 2 tsp. water
Fajita Marinade

Combine marinade ingredients in blender and purée
- 12 oz beer
- 3/4 cup vegetable oil
- 1/2 medium onion, chopped
- Juice of 2 limes
- 4 garlic cloves, minced
- 1 bay leaf
- 2 Tbsp Worcestershire sauce
- 1 Tbsp chili powder
- 1 tsp black pepper
- 1 tsp Tabasco sauce
- 1 tsp ground cumin
- 2 to 3 lbs beef steak
Beef Stroganoff

Brown meat in large pot. Reserving 2/3 cup of broth, stir in remaining broth, onion powder, ketchup and garlic salt
- 2 pounds round stead, cubed
- 1 10 oz can mushrooms
- 2 10 oz cans beef broth
- 1 teaspoon onion powder
- 1/4 cup ketchup
- 1/3 cup flour
- 1 1/2 teaspoons garlic salt
- 2 cups sour cream
- 10 ounces egg noodles, cooked
Basmati Rice - Indian Style

Great authentic basmati rice to be served with chicken tikka masala or chicken tandoori
- 1 1/2 cups basmati rice
- 2 tablespoons vegetable oil
- 1 cinnamon stick (2 inch)
- 2 green cardamom pods
- 2 whole cloves
- 1 tablespoon cumin seed
- 1 teaspoon salt (optional)
- 2 1/2 cups water
- 1 small onion, thinly sliced
Caprese Garlic Bread

1. Preheat oven to 400 degrees F
- 1 loaf ciabatta bread, horizontally cut in half
- 4 tablespoons salted butter
- 3 cloves garlic, minced
- 12 oz. fresh mozzarella cheese, sliced
- 1/2 cup balsamic vinegar
- 2 medium tomatoes, sliced
- Salt and freshly ground black pepper, to taste
- 1/3 cup chopped fresh basil

Chop vegetables and simmer all together approx 2 - 3 hours until thick
- 60 large tomatoes (25 lbs)
- 20 large onions
- 50 large peppers, green, red & yellow
- 20 jalapeno chile peppers
- 20 cloves garlic

- 1/2 cup salt
- 1 1/4 cups sugar
- 1 1/4 teaspoons turmeric
- 5 tablespoons chilli powder
