Macaroni Salad

By Hester
Add celery, relish, onion and chopped eggs to cooled macaroni
- 2 cups macaroni, cooked, drained and cooled
- 3/4 cup celery, chopped
- 2 tablespoons sweet pickle relish
- 2 tablespoons green onion, chopped
- 2 hard boiled eggs, chopped
- 3/4 cup mayonnaise
- 1 teaspoon salt
- 1/4 teaspoon pepper
Grilled Indian Chicken

Cut the skinless chicken breasts into 1-inch pieces
- 2 lbs boneless skinless chicken breasts
- MARINADE
- 1 cup plain yogurt
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1/4 teaspoon cardamom
- 1 tablespoon fresh lemon juice
- 2 tablespoons freshly squeezed lime juice
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon finely grated ginger
- 4 garlic cloves, minced
- 1/2 teaspoon ground cumin
- 4 scallions, greens included, minced
- 1/4 teaspoon sea salt
- fresh ground pepper
- lemon or lime wedge (to garnish)
Penne with Vodka Cream Sauce Recipe

1. In a large saucepan, saute onion in oil until tender
- 1 large onion, chopped
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 2 cans (one 28 ounces, one 14.5 ounces) diced tomatoes
- 1/4 cup vodka
- 1 package (12 ounces) whole wheat penne pasta
- 2 teaspoons prepared pesto
- 1/4 teaspoon salt
- 1/4 teaspoon crushed red pepper flakes
- 2 tablespoons all-purpose flour
- 1/2 cup fat free half and half cream
- 1 cup skim milk
- 1/2 cup shredded Parmesan cheese
Garlic Lemon Shrimp for 2

- 1/2 pound uncooked large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 2 garlic cloves, sliced
- 1-1/2 teaspoons lemon juice
- 1/2 teaspoon ground cumin
- 1/8 teaspoon salt
- 1 tablespoon minced fresh parsley
- 2 cups Hot cooked pasta or rice

- 12 Rhodes frozen rolls, thawed but still cold

- 2 pounds boneless, skinless chicken breasts, grilled
- 4 cups romaine lettuce, shredded
- 2 cups bean sprouts
- 1/2 cup dry roasted peanuts, chopped
- 2 cups linguini, cooked
- PEANUT SAUCE
- 1/4 cup soy sauce
- 1/4 cup creamy peanut butter
- 2 tablespoons brown sugar, packed
- 2 tablespoons sesame oil
- 1 tablespoon vinegar
- 1 tablespoon ginger root, grated
- 1 clove garlic, crushed
- dash cayenne pepper, optional

- 4 Tbsp soy sauce
- 1 Tbsp fish sauce
- 2 Tbsp palm sugar
- 1 Tbsp dark soy sauce
- 8 tbsp water
- 4 heads garlic (30-40) cloves

- 2 1/2 cups frozen unsweetened tart red cherries
- 1/2 cup butter or margarine
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup light cream or half-and-half or milk

Spinach with Garlic Vinaigrette

Combine the first 6 ingredients in a large bowl, stirring well with a whisk

- 1 tablespoon white wine vinegar
- 1/2 teaspoon Dijon mustard

- 1/8 teaspoon salt
- 2 garlic cloves, minced
- 6 cups baby spinach leaves (about 6 ounces)
- 1/4 cup vertically sliced red onion
Squash & coconut curry
