Cranberry Coffee Cake

mix flour, sugar, baking powder and salt together in mixing bowl
- 2 cups flour
- 1/2 cup sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1/4 cup cooking oil
- 3/4 cup milk
- 1 cup cranberries, fresh or frozen
- TOPPING
- 1/3 cup flour
- 1/3 cup brown sugar
- 1/4 cup butter
- 1 teaspoon cinnamon
Sizzling Salsa Vinaigrette

Whisk all ingredients in a small bowl, adding vinegar to taste, and then salt if needed
- 1/4 cup plus 2 Tbsp salsa
- 1/4 cup plus 2 Tbsp olive oil
- 2 - 3 Tbsp white vinegar
- Salt to taste
- SALAD
- 1/4 cup minced onion
- 1/4 cup chopped celery
- 3 Tbsp minced cilantro
- Romaine lettuce
- BBQ chicken breast

1 Make a white sauce of butter, flour, milk and salt
- 3 tablespoons butter
- 1/4 cup flour
- 2 cups milk
- 1/2 teaspoon salt
- 1 cup crouton
- 1/4 cup melted butter
- 1 teaspoon italian seasoning
- 6 hard-boiled eggs, quartered
- 2 cups cubed cooked ham
- 8 ounces sliced mushrooms, sauteed
Crispy Quinoa Cakes

- 1 large Egg
- 2 Tbs. Flour
- 1 1/2 Tbs. Tahini (or nut butter)
- 1 1/2 tsp. white wine vinegar
- 1 1/2 cups quinoa (cooked )
- 1/2 cup sweet potato (finely grated )
- 1/2 10-oz. pkg. Spinach (frozen, thawed and squeezed dry)
- 1/4 cup sun-dried tomatoes (chopped )
- 1/4 cup nuts (chopped, optional)
- 2 oz. Feta Cheese (crumbled, optional)
- 2 Tbs. Onion (finely diced )
- 1 Tbs. Parsley (chopped fresh )
- 1 clove Garlic (minced (1 tsp.))
- 1/2 tsp. Salt
Spiced Tea

- 2 cups iced tea mix with lemon
- 1 cup orange drink crystals
- 1 1/2 teaspoons ground cinnamon
- 3/4 teaspoon ground allspice

Punjabi Kadhi Pakora Recipe

Preparing the curd mixture: 1
- For kadhi mixture:
- 1.5 cup full fat sour curd/dahi/yogurt or 375 gram curd
- 3 cups water or add as required
- 1/2 tsp red chilli powder/lal mirch powder
- 1/2 tsp turmeric powder/haldi
- 1/2 tsp garam masala powder
- generous pinch of asafoetida/hing
- 1 to 1.5 tsp salt or add as required
- 8 tbsp besan or about 40 grams
- mustard oil or sunflower oil or any oil for shallow frying or deep frying pakoras
- For onion pakoras:
- 1 cup tightly packed thinly sliced onions or 2 medium to large onions or 150 grams
- 1 cup besan or gram flour
- 1/2 tsp red chilli powder/lal mirch powder
- 1/2 tsp turmeric powder/haldi
- 1/2 tsp garam masala powder
- 1/2 tsp ajwain/carom seeds
- 2/3 to 3/4 tsp salt or add as required
- 1/4 cup water
- For the punjabi kadhi:
- 1 small to medium onion or 1/3 cup chopped onion
- 1 tbsp chopped ginger/adrak
- 3/4 to 1 tbsp chopped garlic/lahsun
- 8-10 fenugreek seeds/methi seeds
- 2 green chillies chopped
- 2 red chillies broken
- 1 tsp cumin seeds/jeera
- a generous pinch of asafoetida/hing
- 8 to 10 curry leaves or 1 sprig
- 2 tbsp mustard oil
