Bruschetta 'n Cheese Stuffed Chicken Breasts

HEAT oven to 350ºF. MIX tomatoes, 1/2 cup cheese and basil in medium bowl
- 1 can (19 fl oz/540 mL) diced tomatoes with garlic and olive oil, undrained
- 1-1/4 cups KRAFT Mozzarella Shredded Cheese, divided
- 1/4 cup chopped fresh basil
- 1 pkg. (120 g) STOVE TOP Stuffing Mix for Chicken
- 8 small boneless skinless chicken breasts (2 lb./900 g)
- 1/3 cup KRAFT SIGNATURE Roasted Red Pepper with Parmesan Dressing
Twice Baked Spaghetti Squash

Preheat oven to 350F and line a large baking sheet with foil
- 2 small spaghetti squash or one large
- 2 tbsp butter
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp pepper
- 4 slices Provolone cheese
CROCKPOT BEEF AND BROCCOLI

1. Place beef in a crock pot
- 1 pound boneless beef chuck roast, sliced into thin strips
- 1 cup beef consumme
- 1/2 cup soy sauce
- 1/3 cup brown sugar or honey
- 1 tablespoon sesame oil
- 3 garlic cloves, minced
- 2 tablespoons cornstarch
- 2 tablespoons cooled sauce from the crock pot after being cooked
- Fresh broccoli florets (as many as desired)
- Hot cooked rice (brown rice, or riced cauliflower)
Satay Pork Steaks

Perk up some pork steaks with this delicious satay-style glaze
- 3 tbsp crunchy or smooth peanut butter
- 1 garlic clove, crushed
- 1 tbsp dark soy sauce
- 1 cm piece fresh ginger, grated
- Juice of 1/2 lime
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 4 pork shoulder steaks, halved
- Chopped fresh coriander, to garnish
- Salad, to serve

1. In a small bowl, mix all ingredients together

Combine flour, baking powder, baking soda, cinnamon and salt
- 3 cups zucchini, grated
- 3 cups flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda

- 2 1/3 cups brown sugar

Savory Zucchini Cheese Bread

In saucepan, melt butter. Cook onion until soft
- 1 cup chopped onion
- 1/4 cup butter
- 2 1/2 cups Bisquick
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 cup milk
- 3 eggs
- 1 1/2 cups shredded zucchini
- 1 cup shredded cheddar cheese
- 3/4 cup toasted chopped almonds
White Chili

In a large saucepan, heat a small amount of oil and saute the onion
- 2 pounds chicken breasts, no skin, no bone, cut into pieces
- 2 onions, chopped
- 2 1/2 cups chicken broth, canned or homemade
- 1 (7 oz.) can green chiles, chopped
- 1 (16 oz.) jar salsa verde (green salsa)
- 1 teaspoon each: cumin and garlic powder
- 1 teaspoon oregano
- 3 cups white beans, cooked (use canned or make yourself)
- 1/2 bunch cilantro, chopped--optional
- 1 pound low-fat jack cheese, grated

- 1 1/4 cups whole-wheat flour, plus a little more for dusting
- 1/2 cup toasted sesame seeds (I like to use 1/4 cup each white & black sesame seeds), plus 1 teaspoon or so for finishing
- 1/2 teaspoon salt
- 3 tablespoons extra virgin olive oil
- 3 tablespoons sesame oil*
- 4 – 5 tablespoons water, as needed
Old Bay Crabmeat Stuffing

It's best suited to (of course) fish or seafood, but also chicken or a Cornish hen
- 4 cups bread , cubed and toasted in a 325 degree oven for about 5 to 10 minutes
- 1/4 cup butter
- 1 1/2 cups chopped onions
- 1 tablespoon Old Bay Seasoning
- 1 tablespoon Worcestershire sauce
- 1/2 tablespoon Tabasco sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried chives
- 1/2 teaspoon nutmeg
- 1/4 teaspoon celery seed
- 1 (6 ounce) can crabmeat , undrained
- 1/2 teaspoon salt , to taste
- 1 tablespoon sherry wine
- 2 tablespoons water
- salt (it won't take much...)
