Boeuf Bourguignon

Remove rind from bacon, and cut bacon into lardons (sticks, 1/4 inch thick and 1 1/2 inches long)

- 6 ounces bacon
- 1 Tbsp. olive oil or cooking oil
- 3 pounds lean stewing beef , cut into 2-inch cubes

Heat enough of the oil to coat the bottom of a large Dutch oven over medium-high heat
- 1/4 cup vegetable oil
- 3 pounds beef brisket, preferably second cut, fat trimmed to 1/4 inch (see NOTE)
- Kosher salt
- Freshly cracked black pepper
- Granulated garlic powder
- 1 pounds peeled cipollini onions (may substitute peeled pearl onions)
- 2-3 whole cloves garlic
- 3 cups water, plus more as needed

Basil Fried Rice

1. In a wok or skillet, heat oil until hot but not smoking
- 30 ml oil
- 1 clove garlic, finely chopped (increase to suit tastes)
- 1-3 small fresh red chilies or green chilies, finely chopped
- 1 cup fresh mushrooms, halved
- 1 small onion, chopped
- 2 cups cold cooked rice
- 1 small green bell pepper, diced
- 1 bunch long beans or snake beans or green beans or French haricots vert, cut into short lengths
- 3 tablespoons soy sauce
- 15 leaves basil (or as much as you want)
Easy Sole Meuniere

1. Combine flour, 2 teaspoon salt, 1 teaspoon pepper
- 1/2 cup flour
- s&p
- 4 fresh sole (3-4 oz each)
- 6 tablespoons unsalted butter
- 1 teaspoon grated lemon zest
- 6 tablespoons lemon juice (3 lemons)
- 1 tablespoon minced fresh parsley
Matzo Balls

Blend fat or oil and eggs together
- 2 T. melted fat or oil
- 2 Ig. eggs, slightly beaten
- 1/2 c. Manischewitz matzo meal
- 1 tsp. salt, if desired
- 2 T. soup stock or water
