Minestrone Soup

Combine all ingredients in Dutch Oven except cheese
- 1 cup carrots, thinly sliced
- 1 small zucchini, sliced
- 1/2 cup onion, chopped
- 1/2 cup celery, sliced
- 2 cans (14.5 oz) chicken broth
- 2 cups water
- 1 can (28 oz) diced tomatoes, undrained
- 1 can (14.5) dark red kidney beans
- 1 cup medium shell pasta, uncooked
- 1 can italian styled green beans
- 1 tsp oregano and basil
- 2 ounces (1/2 cup) parmesan cheese, grated

1. In a large skillet with a tight-fitting lid, combine vinegar, soy sauce, and ginger

Drunken Noodles

Cook noodles in large pot of boiling salted water until tender but still firm to bite, stirring frequently
- 2 14-ounce packages 1/4-inch-wide flat rice noodles shopping list

- 1/4 cup chopped fresh Thai chiles (Prik ki nu - unless you want some major heat, rib and seed these and wash your hands carefully afterwards) shopping list

- 1/4 cup fish sauce (nam pla or nuoc nam) shopping list
- 1/4 cup black soy sauce (Siew Dam - It is very dark, almost black, in color and thick like light syrup in consistency. Its flavor is sweet, almost like molasses) shopping list
- 1/4 cup Golden Mountain sauce (could substitute maggi seasoning which is very similar in taste or - in a pinch, use light soy sauce) shopping list

- 4 Anaheim chiles or Italian frying peppers (can substitute 2 green bell peppers, about 12 ounces total, cut into strips...but I really like the Italian peppers) shopping list
- 1/2 cup fresh Thai basil leaves (can use regular basil leaves - but the Thai basil is stronger in taste than most sweet basils. It has small leaves, purple stems and a subtle licorice taste)

Peppered Steak

1. Mix marinade. Add beef
- Marinade:
- 1 lb round or flank steak, sliced 1/8 "vthin x 1/2 " long
- 1 lb brocolli, stem cut diagonally, bite sized
- 1 lb carrots, cut diagonally
- 1 cup canola oil
- 2 cloves garlic, minced
- 1/4 cup water
- 2 Tablespoon soy sauce
- 1 teaspoon honey
- 1 Tablespoon cornstarch
- 1 Tablespoon canola oil
- Sauce:
- 4 scallions, white part minced
- 4 teaspoons ginger, minced
- 1/4 cup szechuan sauce
- 2 Tablespoons dry sherry
- 2 Tablespoons soy sauce
- 2 teaspoons honey
Banana Crumb Muffins

1.Preheat oven to 375 degrees F (190 degrees C)
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 bananas, mashed
- 3/4 cup white sugar
- 1 egg, lightly beaten
- 1/3 cup butter, melted
- 1/3 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 1/8 teaspoon ground cinnamon
- 1 tablespoon butter
Summer Spaghetti

1. Bring a large pot of water to a boil
- 2 large or med red, ripe summer tomatoes
- 1/2 medium red or sweet onion
- 1/4 cup pitted, mixed kalamata and green olives
- 2 tablespoons drained capers
- 1/4 cup olive oil, plus more for drizzling
- 2 tablespoons red wine or sherry vinegar
- 1-2 teaspoons white sugar (options to taste)
- salt & pepper
- 12 ounces fresh or 8 ounces dried spaghetti

- 1 tablespoon fresh grated ginger
- 1 tablespoon fresh lime juice
- 2 teaspoons curry powder
- 4 scallins, trimmed and minced

- 1 1/2 lbs rib-eye steak, trimmed of fat
- 1/4 cup soy sauce
- 1 tablespoon hot chile sesame oil or toasted sesame oil & red hot
