Eggplant Parmigana

1. Trim eggplants and cut into 1/2 inch thick slices
- Sauce:
- 2 medium eggplants (ab 1 lb)
- salt
- olive oil
- 8 ounces fresh mozzarella, thinly sliced
- 1/2 cup freshly grated parmigano-reggiano cheese
- 2 1/2 cups marinara sauce ( see recipe below)
- 4 large garlic cloves, lightly smashed
- 1/2 cup olive oil
- 4 lbs plum tomatoes (very ripe, peeled, seeded and chopped) OR 2 (28 oz) cans diced tomatoes (italian, drained)
- salt
- 8-10 fresh basil leaves, torn into pieces
Pepper Jelly and Soy Glazed Salmon

1. Thaw fish, if frozen. RInse fish, pat dry
- 1 2 lb fresh or frozen skinless salmon fillets (ab 1 inch thick)
- 2/3 cup green jalapeno pepper jelly
- 1/3 cup rice vinegar
- 1/3 cup soy sauce
- 3 green onions, sliced
- 1 Tablespoon grated fresh ginger
- 2 teaspoon toasted sesame oil
- 3 cloves garlic, minced
- 1/4 teaspoon crushed red pepper
- 1/4 cup snipped fresh cilantro
- 1/4 cup sliced fresh jalapeno chile peppers and/or sliced green onions

- 3 pkgs (8oz) cream cheese, softened
- 3/4 c. sugar
- 1 Tbsp. flour
- 1 1/2 tsp vanilla extract
- 3 lg. eggs
- 1 lg. egg yolk
- 1/4 c. milk
Bruschetta Chicken

1. Place flour and eggs in separate shallow bowls
- 1/2 cup flour
- 2 eggs, lightly beaten
- 4 bonless, skinless chix breast
- 1/4 cup grated parm cheese
- 1/4 cup dry bread crumbs
- 1 tablespoon butter, melted
- 2 large tomatoes, seeded and chopped
- 3 tablespoons minced basil
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Spicy Baked Salmon

Combine all seasoning ingrediants and spread over salmon

- 2 Tablespoon onion, minced
- 1 clove garlic, minced
- 1 1/2 teaspoon pepper
- 3/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 3/4 dried thyme
- 1/4 teaspoon salt

- garlic powder to taste
- 1/2 lb of apricot preserves
- 6 ounces Russian dressing

1. Cut chix into 1-inch pieces; place in a small bowl and toss with cajun seasoning 2
- 1 lb skinless, boneless chix breast halves
- 2 tsp cajun seasoning
- 1 small red onion, cut in thin wedges
- 2 yellow, green, and/or orange sweet peppers, cut into bit sized strips
- 2 14.5 oz cans no-salt added stewed tomatoes

- 2 tablespoons cream cheese
- 1 pint heavy cream
- 1 teaspoon garlic powder
- salt

- 1 lb fettuccine, prepared as directed

- 4 oz Mont Jack cheese
- 1/2 cup butter, softened
- 1 teaspoon minced fresh parsley
- 1 teaspoon dried oregano
- 1/2 - 1 teaspoon dried marjoram
- 8 bonless, skinless chix breast halves
- 1/2 teaspoon salt
- 1/2 cup flour
- 2 eggs, beaten
- 1- 3/4 cups crushed Cesar salad croutons
