Tomato and Olive Penne

1. In a large pot of salted boiling water, cook the penne until al dente

- 1/4 teaspoon red pepper flakes
- 1/4 cup kalmata olives, pitted and sliced
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan

In a large skillet, heat oil over medium heat
- ¼ cup extra virgin olive oil
- 2 garlic cloves, finely chopped
- ½ lb boneless, skinless chicken breasts, cut into ½ inch strips
- 1 ½ cups broccoli florets
- ¾ cup oil-packed sun-dried tomatoes, drained and thoroughly sliced
- 1 tsp dried basil leaves
- Pinch of crushed red pepper flakes
- Salt and pepper to taste
- ¼ cup dry white wine
- ¾ cup chicken broth
- 1 tbsp butter
- ½ lb bowtie pasta, cooked and drained
- Grated parmesan (optional)
Slow Cooker Chicken and Dumplings

Place thawed chicken in crock pot and top with butter
- 1 lb of Boneless Skinless Chicken Breasts (about 3)
- 2 Tablespoons Unsalted Butter
- 2 cans (10.5oz) Condensed Cream of Chicken Soup
- 1 can (14oz) Chicken Broth
- 1 medium White Onion, diced
- 4 Large Flaky Refrigerator Biscuits (half a can)

Crab Stuffed Fish

1.Preheat the oven to 400°F; coat a 9x13-inch baking dish w/ non stick cooking spray
- 6 tablespoons butter, divided
- 1 celery rib, finely chopped
- 1 small onion, finely chopped
- 1/4 cup chopped parsley
- 1 (4 1/2 ounce) can crabmeat, drained & flaked
- 1/2 cup dry Italian breadcrumbs
- 1 tablespoon lemon juice
- 1/8 tablespoon crushed red pepper flakes
- 6 fish fillets Tilapia or Flounder(about 2 pounds)

- 1 cup sliced shallots (ab 5)
- 3/4 cup low-salt chix broth
- 1/2 cup heavy whipping cream
- 3 tablesspons dry marsala

- 1 Tbsp canola oil
- 1 lb ground turkey
- 1 c. canned black beans, rinsed & drained
- 1 c. chopped red pepper
- 1/2 c finely chopped red onion
- 1/4 c bbq sauce
- 4 tsp fresh lime juice
- 1 tsp chili powder
- 1 tsp ground cumin
- salt
- 4 (12 inch) whole wheat flour tortillas
- 1 c. mixed greens
- 2 oz low fat cheddar cheese, shredded
