Egg Drop Soup

1.Reserve 3/4 cup of chicken broth, and pour the rest into a large saucepan
- 4 cups chicken broth, divided
- 1/8 teaspoon ground ginger
- 2 tablespoons chopped fresh chives
- 1/4 teaspoon salt
- 1 1/2 tablespoons cornstarch
- 2 eggs
- 1 egg yolk
Spaghetti Puttanesca

1. Bring a pot of water to boil and add generous amount of salt
- salt & pepper
- 1 lb spaghetti
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1/2 teaspoon red pepper flakes
- 6 anchovy fillets, rinsed (optional)
- 1 can (28 oz) whole peeled tomatoes in juice
- 2 tablespoons capers, drained and rinsed
- 1/2 cup kalamata olives, pitted and chopped
Fish Chowder

1. In 6-7 qt saucepot, cook bacon on medium 5-7 minutes or until browned and crisp, turning occasionally
- 4 slices center-cut bacon
- 1 lg. carrot, chopped
- 1 med. celery root , peeled and chopped
- 1 lg. potato peeled and chopped
- 2 sm. onions, chopped
- 2 Tbsp. all-purpose flour
- 1 c. bottled clam juice
- 1/2 c water
- 1 lb. skinless cod fillets, cut into 1-in chunks
- 1/2 c. reduced fat milk
- s&p
- fresh parsley, chopped for garnish
Slow Cooked Minestrone

1. In 5- 5.5 quart slow cooker combine beef, undrained tomatoes, broth, beans, carrots, s&p
- 1 lb boneless beef chuck, cut in 1/2 inch cubes
- 2 14.5 oz cans diced tomatoes with basil, garli, and oregano (undrained)
- 2 14oz cans beef broth
- 1 15 oz can canneilini beans, rinsed and drained
- 1 15 oz can red kidney beans, rinsed and drained
- 1 cup thinly sliced carrots (2 med)
- 1/4 tsp salt & pepper
- 1 cup dried bow tie pasta
- 1 med yellow summer squash halved lengthwise and sliced
- grated parm cheese
Crab Cake

Blend eggs and mayo, season with all the seasonings and sauce
- 2 eggs, beaten
- 5 Table mayo
- 1/2 tsp worchersire
- 1 tsp dry mustard
- 1/4 tsp s & p
- 1 cup bread crumbs
- 1 tsp old bay
Double Gooey Chocolate Cake

Preheat oven to 350 degrees F
- 8 tablespoons (1 stick) butter, melted, plus 8 more tablespoons (1 stick) butter, melted, plus additional butter, for greasing pan
- 1 (18.25-ounce) package chocolate cake mix
- 1 egg, plus 2 eggs
- 1 (8-ounce) package cream cheese, softened
- 3 to 4 tablespoons cocoa powder
- 1 (16-ounce) box powdered sugar
- 1 teaspoon vanilla extract
- 1 cup chopped nuts
Fettuccine with Lemony Shrimp

1. Heat large saucepot of water
- s&p
- 2 lg. leeks
- 1 Tbsp plus 2 teaspoons olive oil
- 1 1/2 lbs shrimp, shelled and deveined
- 2 cloves garlic, thinly sliced
- 1/4 tsp red pepper
- 1 c dry white wine
- 1 lb fettucine
- 1 Tbsp butter
- 2 Tbsp chopped fresh basil
- 2 Tbsp chopped fresh parsley
- 1 lemon
Wok Glazed Sea Scallops

Mix the cornstarch with 3 Tbsp water to make a slurry and set aside
- 1 Tbsp cornstarch
- 2 Tbsp Asian black beans
- 1 Tbsp chopped fresh ginger
- 2 Tbsp each chopped garlic, Chinese rice wine, and peanut seed oil
- 10 oz sea scallops
- 1 cup chicken stock
- 4 Tbsp soy sauce
- red chili flakes
- 2 Tbsp chopped cilantro (coriander)
Cod and Potatoes

Heat oven to 425 degrees. 2Put the potatoes in a roasting pan or on a baking sheet
- 1/2 lb new potato, peeled if desired (halved if smallish or cut into 1/2-inch chunks)
- 3 tablespoons virgin olive oil
- 1 teaspoon kosher salt, for the potatoes
- 1/2 teaspoon black pepper, for the potatoes
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 teaspoon lemon pepper seasoning
- 8 ounces cod fish fillets (skin removed if needed)
- 1/2 teaspoon fresh garlic, minced
Pasta Puttanesca

- 1/4 cup olive oil
- 2 Tbsp minced garlic
- 1 can diced tomatoes *28 oz)
- 1/2 cup pitted black olives, coarsely chopped
- 3 Tbsp coarsely chopped anchovies
- 2 Tbsp capers, rinsed and chopped
- 1 1/2 tsp salt
- 1/4 tsp red chili flakes
- 1/4 cup chopped fresh parsley
- 1 lb linguine or spaghetti
- parmesan cheese for grating
