Rub oil all over fillets. 2Place in greased baking dish
- 20 ounces cod fish fillets (4 pieces defrosted)
- 1/2 teaspoon olive oil
- Spice rub
- 1/2 teaspoon thyme leaves
- 1 teaspoon dried parsley
- 1/2 teaspoon smoked paprika
- 1/2 lemon, zest
- 1/2 teaspoon salt, to taste
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- 1/2 teaspoon brown sugar
- 1 bulb roasted garlic, removed from skin and mashed
- 4 tablespoons panko

Directions: 1.In a large pot of boiling, salted water, cook the pasta until al dente
- Ingredients:
- 1 pound tri-color fusilli pasta
- 3 bell peppers (yellow, red and green), cut into strips
- 6 ounces grape tomatoes, halved (1 cup)
- 1/2 cup pitted kalamata olives, coarsely chopped
- One 6.5-ounce jar marinated artichokes, drained and chopped
- 1 red onion, sliced
- 2 cloves garlic, finely chopped
- 1/2 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 1 cup packed fresh basil leaves, chopped
- 1 teaspoon lemon juice
- Italian seasoning
- Salt and pepper

Pumpkin Pie

Preheat the oven to 350 degrees F
- 1 (8-ounce) package cream cheese, softened
- 2 cups canned pumpkin, mashed
- 1 cup sugar
- 1/4 teaspoon salt
- 1 egg plus 2 egg yolks, slightly beaten
- 1 cup half-and-half
- 1/4 cup (1/2 stick) melted butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger, optional
- 1 piece pre-made pie dough
- Whipped cream, for topping

Bake pie crust per package directions
- Mary Reaver’s Tomato Basil Tart
- 1 deep dish pie crust, baked
- 3/4 cup mozzarella cheese, shredded
- 4-5 medium tomatoes, sliced thinly (I would drain or pat them dry if they're really juicy)
- 10 fresh basil leaves, chopped
- 4 cloves garlic, finely minced
- 1 1/2 cup mozzarella cheese, shredded
- 1/4 cup parmesan cheese
- 2/3 cup mayonnaise (I used light mayo)
Penne A La Vodka

In a wide pot big enough to hold all the pasta and sauce, melt the butter
- 3 tbs butter
- 3-4 cloves garlic, chopped finely
- 1 cup thinly sliced prosciutto
- 1 (28 ounce) can whole tomatoes, drained and chopped
- 1/2 cup heavy cream
- 1/4 cup vodka (only the kind you would drink)
- salt and pepper
- 1 pinch crushed red pepper flakes
- 1 lb penne pasta
- 3/4 cup freshly grated parmigiano-reggiano cheese
Cajun Meatloaf

This recipe will feed about 8 large-appetited humans
- 3 * 3 Bell Peppers (2 if they’re large) – I’m using a red, orange, and yellow. Any color works well.
- 2 * 2 Medium Onions
- 1 * 1 bunch of Celery (5-6 ribs)
- 8-10 * 8-10 Cloves of Garlic
- 3 * 3 Eggs
- 6 * 6 Tablespoons of Butter (Yeah baby)
- 1-2 * 1-2 cups of Breadcrumbs
- * Ground Nutmeg
- * Black Pepper
- * Cayenne Pepper
- 1/2 * 1/2 Cup of Milk (Whole is probably best…I only had 2% on hand)
- 1 * 1 Tablespoon Worcestershire
- 2 * 2 Cups of Ketchup
- 2 * 2 Tablespoons Honey
- 2 lbs of Lean Ground Beef (this is 92/8)
- 1 lb of Ground Pork

Peel and segment the lemons ON a plate, stir together the flour, cornmeal, and cayenne
- 2 lemons
- 1/2 cup flour
- 2 Tbsp fine-grind cornmeal
- 1/4 tsp cayenne pper
- 2 sole fillets, about 6 oz each
- s&p
- 1 Tbsp olive oil
- 4 Tbsp butter
- 1/2 shallot, finely diced
- 1 Tbsp chopped fresh chives
- 1 Tbsp capers, rinsed and patted dry
Obama Chili

. Sauté onions, green pepper, and garlic in olive oil until soft
- 1 large onion, chopped
- 1 green pepper, chopped
- Several cloves of garlic, chopped
- 1 Tbsp olive oil
- 1 lb ground turkey or beef
- 1/4 tsp ground cumin
- 1/4 tsp ground oregano
- 1/4 tsp ground turmeric
- 1/4 tsp ground basil
- 1 Tbsp chili powder
- 3 Tbsp red-wine vinegar
- 5-6 tomatoes, chopped
- 1 can red kidney beans
Wild Fish Cakes

1. Bring 1 lb fish and 2 cups of water to boil in 12 inch skillet
- 1 lb red snapper or orange roughy
- 2 cups water
- 1/2 cup cooked wild rice
- 1/2 cup mayo
- 1/2 cup dried bread crumbs
- 1 1/2 tsp old bay
- 1 large egg, beaten
- 1/2 tsp s&p
- 1/2 tsp dried mustard
