- 2 cups penne pasta, uncooked
- 3/4 lb boneless skinless breasts, thinly sliced
- 1/2 cup chopped onions
- 1 tbsp olive oil
- 1 pkg (6 oz) snow peas
- 1 small red pepper, chopped
- 2 tsp minced garlic
- 2 tbsp butter
- 1 tbsp flour
- 1- 1/2 cup milk
- 4 oz cream cheese, cubed
- 1/2 cup grated romano cheese
- 1 tbsp finely chopped fresh parsley
Baked Tilapia with Fresh Spinach

Heat olive oil in pan with chopped onions until golden
- 4 to 6 tilapia filets
- Olive oil
- 8 to 12 ounces baby spinach
- 1/4 cup chicken broth
- 1/2 a small yellow onion, chopped coarsely

Barilla No-Boil Homemade Style (Flat) Lasagna Noodles: These were PERFECT
- SAUCE:
- 1 chicken breast, cooked & shredded
- 1/4 - 1/4 C fresh, shredded parmesan cheese
- 1 - 1 C ricotta cheese
- 1/2 - 1/2 C shredded mozzarella
- 1 - 1 Egg, beaten
- 1 - 1 garlic clove, minced or use garlic press
- 1 - 1 T chopped fresh basil (maybe a little more than 1 T)
- 1/4 - 1/4 t pepper
- 1/2 - 1/2 t salt
- 1 1/2 - 1 1/2 C jarred marinara (you could make your own, but this is faster and tasted great)
- 1/2 - 1/2 C cream
- 24 - 24 grape tomatoes, smashed up a bit (I pulsed in the blender a few times)
- 1/4 - 1/4 – 1/2 C shredded asiago cheese
- SHELLS:
- Ideally I suppose you make your own pasta, roll it into thin sheets and cut into rectangles. Yeah, THAT’S gonna happen around here….so, I tried two readily-available pastas.

- 1 lg. sweet potato, peeled and cut into 1/2 inch chunks

1. Preheat oven 325. Generously grease 2 qt baking dish
- 4 cups thinly sliced apples
- 1/2 teaspoon ground cinnamon
- 1 cup flour
- 1/4 teaspoon salt
- 1/2 cup evaporated milk
- 1/4 cup chopped pecans
- 1 1/2 cup sugar
- 1/2 cup chopped pecans
