Chicken Marsala

Dip chicken into eggs, coat with bread crumbs
- 4 skinless boneless breasts
- 2 eggs
- 1/2 c Italian style bread crumbs
- 2 garlic cloves, minced
- 2 tbsp butter
- 1/4 c marsala wine
- 1 packet chicken bouillion
- s&p
- 2 Tbsp parsley, chopped
Wine-Tomato-and Clam

Use a Chianti or Merlot for red wine and Pinot Grigio for white in the White Wine-Tomato-and-Clam Pasta variation
- 1/2 teaspoons minced fresh garlic
- 2 tablespoons olive oil
- 1/2 cup dry white wine
- 2 (14 1/2-ounce) cans petite diced tomatoes, undrained
- 2 tablespoons chopped fresh or 1 teaspoon dried basil
- 1 tablespoon chopped fresh or 1/2 teaspoon dried oregano
- 1 teaspoon sugar
- 1/4 teaspoon freshly ground black pepper
- 12 ounces uncooked thin spaghetti
- 1 (4-ounce) block mozzarella cheese, shredded
- 1/3 cup freshly grated Parmesan cheese
- 2 (6.5-ounce) cans chopped clams, drained
- Toppings: chopped fresh basil, freshly grated Parmesan cheese
Sweet Potatos

1.Preheat oven to 350 degrees F (175 degrees C)
- 5 sweet potatoes
- 1/4 teaspoon salt
- 1/4 cup butter
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/2 cup white sugar
- 2 tablespoons heavy cream
- 1/4 cup butter, softened
- 3 tablespoons all-purpose flour
- 3/4 cup packed light brown sugar
- 1/2 cup chopped pecans

Fry beef, drain. Add rest of ingrediants
- 2 cans (28 oz) Bush Bold and Spicy baked beans (drain slightly)
- 2 cans (14 oz) chili style chunky tomatoes (del monte- safeway) drain slightly
- 1 lb ground beef
- pepper
- 1 1/2 teaspoon chili powder
- 1 bay leaf
- 1 jar picante sauce
- 1 small can green chili pepper, diced
Cowboy Casserole

1. IN a large skillet, cook beef over med heat until no longer pink
- 1/2 lb lean ground beef
- 1 can (8 oz) whole kernel corn, drained
- 2/3 cup condensed cream of chicken soup, undiluted
- 1/2 cup shredded cheddar cheese, divided
- 1/3 cup milk
- 2 Tbsp sour cream
- 3/4 tsp. onion powder
- 1/4 tsp pepper
- 2 cups frozen Tater Tots
Tomato-Ricotta Rigatoni

1. Heat large covered saucepot of water to boiling on high
- s&p
- 2 cans (28 oz) whole, peeled San Marzano tomatoes
- 2 tbsp olive oil
- 2 garlic cloves, thinly sliced
- 1/2 c fresh bread crumbs
- 1/8 tsp crushed red pepper
- 2 fresh basil sprig, plus 2 Tbsp finely chopped basil
- 1 lb rigatoni
- 1 sprig fresh oregano
- 1 c part-skim ricotta

Preheat oven to 375. Melt butter in a med skillet over med heat
- 2 tablespoons unsalted butter
- 1/2 onion, diced
- 1 carrot, diced
- 1/2 cup frozen corn
- 1/2 cup frozen peas
- 1/4 cup flour
- 1 cup milk
- 1 cup chix broth
- 1/2 pound cooked lobster meat
- 1/2 teaspoon dried thyme
- salt an pepper
- 1 large egg, lightly beaten

1. Adjust oven rack to the middle position and preheat to 300 degrees
- 1/3 cup sugar
- 1/4 cup light brown sugar
- 1/2 teaspoon ground cinnamon
- 1 large egg white
- 1/4 teaspoon salt
- 1 pound pecan or walnut halves
Swiss Fondue

In a small bowl, coat the cheeses with cornstarch and set aside
- 1/2 pound imported Swiss cheese, shredded
- 1/2 pound Gruyere cheese, shredded
- 2 tablespoons cornstarch
- 1 garlic clove, peeled
- 1 cup dry white wine
- 1 tablespoon lemon juice
- 1 tablespoon cherry brandy, such as kirsch
- 1/2 teaspoon dry mustard
- Pinch nutmeg
