- 10 to 12 bacon slices
- Salt, pepper and garlic salt, to taste

I made these chops for Maine Maple Sunday
- 2 6 ounce boneless pork loin chops
- 1 TBLS pub style Dijon mustard
- 1 TBLS grade A maple syrup
- 2 tsp extra virgin olive oil
- 1 tsp Worcestershire sauce
- 1/4 tsp granulated garlic
- 1/4 tsp onion powder
- 1/2 tsp lemon juice
- Sea salt & pepper

Combine the salt, garlic, thyme, ginger and pepper; rub over entire roast
- Glaze:
- 1 teaspoon salt
- 1 garlic clove, minced
- 1/4 teasp dried thyme
- 1/4 teasp ground ginger
- 1/4 teasp pepper
- 1 rolled boneless pork loin roast (about 5 lbs.)
- 1/4 cup packed brown sugar
- 1 tablespoon cornstarch
- 1 cup orange juice
- 1/3 cup water
- 1 tablespoon Dijon mustard

Preheat oven to 325. Sprinkle roast with salt and pepper
- 3-4 lb. boneless pork single loin roast
- ½ tsp. salt
- ¼ tsp. freshly ground pepper
- 1 T cornstarch
- 1/3 cup water
- 1 T olive oil
- 1 small sweet red pepper, seeded and minced
- 1 jalapeno pepper, seeded and minced
- 1/3 cup cider vinegar
- 2 T sugar
- (In a pinch, melt a jar of hot pepper jelly instead of making the glaze.)
