Herbed Minced Beef and Vegetable Couscous

This healthy moroccan-inspired couscous salad is nice at room temperature with a bit of nonfat yogurt to top it off
- 7 ounces couscous
- 10 fluid ounces boiling hot vegetable stock
- 1/2 pound extra lean minced beef
- 1 red pepper, deseeded and finely chopped
- 1 carrot, finely diced
- 1/2 pound green beans, cut into 1.5cm lengths
- 1 teaspoon ground cumin
- 1 teaspoon curry powder
- 2 tablespoon finely chopped fresh mint
- 2 tablespoon finely chopped fresh coriander
- 1 tomato, finely chopped
- 4 tablespoon fat free natural yogurt, to serve
Mediterranean Orzo & Couscous Salad

Finely chop zucchini and red pepper
- 2 cups cooked orzo
- 1 cup cooked couscous
- Cook orzo & couscous according to pkg directions. Drain & rinse orzo. Set couscous aside to cool.
- 1/2 green zucchini
- 1 red bell pepper
- 4 oz feta cheese (brick not crumbled --- plain or sun-dried tomato
- 1/4 cup finely chopped herbs (mint, thyme and parsley)
- 1/3 jar sun-dried tomatoes - packed in oil
- 1/4 cup Kalamata olives (or plan black olives)
- 2 Tbsp olive oil (or use 1 Tbsp olive oil and 1 Tbsp oil from tomatoes)
- 1 Tbsp red wine vinegar

In a bowl, combine shrimp, chicken and Creole Seasoning
- 3/4 pound raw shrimp, peeled, de-veined, rinsed and chopped
- 1 small chicken breast, boned, skinned and chopped (generous 1/2 cup)
- 1 tablespoon Emeril's Creole Seasoning (recipe follows)
- 1/4 cup olive oil
- 4 ounces chopped andouille sausage (or substitute another smoked sausage such as kielbasa or chorizo)
- 1/4 cup chopped onions

- 1/4 cup chopped celery
- 2 tablespoons minced garlic
- 1/2 cup peeled, seeded and chopped Italian plum tomatoes (about 2)

- 1 teaspoon hot pepper sauce
- 1 cup chicken stock or broth
- 1 teaspoon salt
- 3 turns freshly ground black pepper
