As canned salmon goes, these delicate patties are actually pretty good and the recipe is easily halved
- 2 cans (7.5 oz. each) salmon, drained.
- 1/2 cup finely-diced celery
- 1/2 cup finely-diced onion
- 1/2 cup corn kernels, canned or frozen
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon drained pickle relish (squeeze on paper towel)
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon paprika
- 2 dashes Tabasco sauce
- 1 egg
- 1 1/2 cups crushed cracker crumbs (saltines)
- 2 tablespoons butter
- 2 tablespoons corn oil or light olive oil
- Salt/pepper to taste

Wash and cut the tomatoes (1/2 or 1/4) and put in large stockpot Add the ingredients and mix with wooden spoon
- 26 - 30 lbs tomatoes (preferably Roma or similar "paste" tomato)
- 1 cup olive oil
- 1/2 to 3/4 cup red wine
- 1/3 cup dried herbs (whatever you like - I used - 2 tsp. rosemary, 2 tsp. sage, 2 tbsp oregano, 2 tbsp basil)
- 6 to 7 large garlics smashed
- 4 - 6 large bay leaves
- Salt to taste (about 2 tbsp)
- 1 cup lemon juice (Real Lemon)

- 1 1/2 teaspoons salt
- 2 cups apple cider vinegar
- 2 cups water
- 2 cups granulated sugar
- 1 teaspoon whole cloves
- 1 teaspoon whole allspice

- 7 pounds sliced, cooked, beets, around 10 cups

- 1/3 cup whole milk
- 1 tablespoon white vinegar
- 2 cups all purpose flour
- 1/2 teaspoon salt
- 1 cup chilled solid vegetable shortening, cut into 1/2-inch cubes
- Filling
- 3/4 cup sugar
- 3 tablespoons cornstarch
- 1 tablespoon grated orange peel
- 3 tablespoon of orange juice
- 1 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 4 cups pitted fresh cherries or canned pitted sweet dark cherries, thawed, drained
- 1 egg, beaten to blend with 2 teaspoons water (for glaze)

I took two recipes & combined them to make these Spicy Canned Banana Pepper
- 4 C banana pepper, about 10-12 peppers
- 4 cloves garlic, sliced in half
- 2 tsp whole black peppercorn
- 1 tsp crushed red pepper
- 1/2 Tbsp granulated sugar
- 1 tsp yellow mustard seed
- 1 1/2 C water
- 1 1/2 C white vinegar
- 1 Tbsp kosher salt, or pickling salt
- 4 cups banana peppers, about 10-12 peppers
- 2 teaspoons whole black peppercorn
- 1 teaspoon crushed red pepper
- 1/2 tablespoons granulated sugar
- 1 teaspoon yellow mustard seed
- 1 1/2 cups water
- 1 1/2 cups white vinegar
- 1 tablespoon kosher salt, or pickling salt
