Cilantro and lime add a refreshing touch to these cumin-spiced chicken tacos. Hearty enough for a main dish, but plenty of fun for a party appetizer.

Ingredients
- Juice and zest from 3 fresh limes
- 4 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon cumin
- 1/2 teaspoon onion powder
- 1/4 teaspoon crushed red pepper flakes
- 1/4 cup fresh cilantro, chopped
- Sea salt and freshly cracked pepper, to taste
- 4 boneless, skinless chicken breasts with fat removed
- 1 package of tortillas (corn or wheat)
- Cotija cheese or queso fresco

Preparation
Step 1
Thoroughly combine juice, zest, garlic, cumin, onion powder, red pepper flakes, cilantro, salt and pepper.
Add chicken breasts and coat evenly.
Marinate in refrigerator 2 hours.
Grill chicken breasts and slice or chop.
Serve chicken in grilled or heated tortillas. Garnish with cheese.
