Tuna Stuffed Avocado

This is a great, healthy alternative to typical tuna salad made with mayonnaise! It is surprisingly good and has a nice fresh taste to it. I prefer to eat it out of the avocado but you can also put it on a sandwich if you like.
Ingredients
- 1 avocado, halved and pitted
- 1 (4.5-ounce) can tuna, drained
- 1/4 cup red bell pepper, diced
- 1 tablespoon jalapeno, minced
- 1/4 cup cilantro leaves, finely chopped
- 1 tablespoon lime juice
- Salt and pepper, to taste

Preparation
Step 1
Scoop out some of the avocado from the pitted area to widen the "bowl" area, but try to leave small layer of avocado in there. Place the avocado that you scooped out into a medium-size mixing bowl. Add the lime juice and mash it with a fork.
Add the tuna, bell pepper, jalapeno, and cilantro to the mixing bowl. Stir it all together until everything is well mixed and add salt and pepper to taste. At times I've also added some onion and/or Rotel tomatoes with chilis.
Scoop the tuna into the avocado bowls.
