Lemon-Parmesan Pasta

This recipe is one of Alex and Nick's favorite. Simple and easy to make. Especially good with cooked chicken breast added to the pasta.

Ingredients

  • 1 pound spaghetti, cooked and drained
  • 1 1/2 cups parmesan, freshly grated
  • 3/4 cup lemon juice (3-4 lemons)
  • 2/3 cup olive oil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 teaspoons lemon zest
  • 2 cups basil (use as much or as little as desired)
  • toasted pine nuts (optional)
  • blackened chicken strips (optional)

Preparation

Step 1

Heat olive oil in saucepan over medium heat. Add parmesan cheese and lemon juice to combine. Remove from heat and add salt, pepper, lemon zest and basil.

Toss sauce with hot pasta, sprinkle with toasted pine nuts and add chicken strips, if desired. Top with additional freshly grated parmesan cheese.
