Angel Hair Pasta with Salmon and Spinach

Ingredients

  • 1 1/2 teaspoon olive oil
  • 1 pound salmon fillets
  • 1 cup vegetable broth
  • 1 tablespoon minced garlic (you can always add more if you are like me!)
  • 16 ounces frozen chopped spinach, thawed and drained
  • 1 pound angel hair pasta, cooked & drained
  • 1/2 cup Parmesan Cheese, grated

Preparation

Step 1

Pour olive oil into skillet, add salmon fillets and cook over medium heat about 5 minutes ( or until fish flakes easily)
Remove from pan, wrap in foil to keep warm.
Pour 1 Tablespoon broth into skillet and heat over medium high heat.
Add garlic and cook 1 minute.
Pour remaining broth into skillet and boil.
Add spinach, reduce heat; cover and simmer 3-4 minutes.
Slice salmon into bite size chunks.
Combine pasta, sauce and salmon in large bowl or serving platter;
toss lightly to mix.
Sprinkle with Parmesan and sseve.
