Mascarpone Cheese & Pesto Pasta

Cook pasta in boiling salted water according to package; reserve 1/2 cup of the cooking water, then drain well
- Pesto:
- 16 oz. package of pasta
- 8 oz. mascarpone cheese
- pesto sauce
- Salt and pepper to taste
- 3 cups basil leaves
- 1 1/2 cups shelled walnuts (pine nuts)
- 4 cloves peeled garlic
- 1/4 cup grated Parmesan cheese
- 1 cup olive oil
Creamy Lemon-Pesto Chicken Pasta

Combine lemon pepper marinade and dried basil
- 3 boneless skinless chicken breasts
- 1 cup bottled lemon pepper marinade (I used Ken’s)
- 2 tsp dried basil
- 2 Tbsp butter
- 1 tsp minced garlic
- 2 Tbsp flour
- 1 cup milk
- 1 tsp lemon zest
- 1/3 cup pesto
- 12 oz linguine
- 1 tomato, chopped and seeded
Pan-seared Shrimp with Pesto Sauce

Blend all ingredients in a food processor, slowly adding the oil
- Pesto:
- 3 jumbo shrimp
- 3 cups cooked pasta
- 1/2 tbsp sesame oil
- -Garnish with shredded parmesan, roasted diced macadamia nuts and roasted diced tomatoes. Salt and pepper to taste.

Heat grill to high heat. In a colander, toss the squash and zucchini with 2 tsp salt; drain for 30 minutes
