Grains - Veggie Fried Quinoa

Cook quinoa on the stovetop per instructions (be sure to wash thoroughly) - used 1 cup uncooked quinoa to 1
- 1 cup Uncooked Red Quinoa (or sub regular)
- 2 Eggs
- 1 Carrot (julienned)
- 1/2 cup Peas
- 1/2 cup Water Chestnuts (diced)
- 2 tablespoons Bragg's Liquid Aminos (or sub soy sauce)
- 2 tablespoons Polynesian Sauce (or sub sweet & sour sauce)

- SERVES 2

1. Place turkey pieces on large plate in single layer
- 1 (2-pound) bone-in turkey thigh, skinned, boned, trimmed, and cut into 1/2-inch pieces
- 1 tablespoon unflavored gelatin
- 3 tablespoons low-sodium chicken broth
- 6 ounces white mushrooms, trimmed
- 1 tablespoon soy sauce
- Pinch baking soda
- 2 tablespoons vegetable oil, plus extra for brushing
- Kosher salt and pepper
- 6 large hamburger buns

- 1/4 cup red wine vinegar
- 2/3 cup dried cherries or cranberries
- 6 tablespoons extra-virgin olive oil
- Table salt and ground black pepper
- 2 small heads red leaf lettuce or green leaf lettuce, torn into bite-sized pieces
- 2 cups shredded red cabbage
- 1 apple , cored and cut into 2-inch strips
- 4 thick slices smoked deli turkey, cut into 2-inch strips
- 1 1/2 cups crumbled blue cheese
- 1/3 cup slivered almonds, toasted
