Aunt Rose's Apple Kuchen

Preheat oven to 400 degrees
- Dough:
- Gala apples (about 9 medium sized)
- 2 cups flour
- 1/2 tsp salt
- 2 tsp baking powder
- 1/2 cup sugar
- 3 T melted Crisco
- 1 egg beaten in 1/2 cup milk
- Custard:
- 7 eggs & can evaporated milk mixed together
- 1/2 cup sugar
- Cinnamon
Clams Casino Dip

Melt butter. Add all chopped vegetables and cover with waxed paper
- 4 cans chopped clams
- 2 stalks chopped celery
- 1 chopped onion
- 1 chopped green pepper
- 1 lb bacon
- 1 stick melted butter
- 36 Ritz crackers (1 sleeve)
Gingerbread Cupcakes w/Orange Icing

Place the rum and raisins in a small pan, cover, and heat until the rum boils
- For The Frosting:
- 1/4 c dark rum
- 1/2 c golden raisins
- 1 stick unsalted butter
- 1 c unsulfured molasses
- 8 oz sour cream
- 1 1/2 tsp grated orange zest
- 2 1/3 c all purpose flour
- 3/4 tsp baking soda
- 1 1/2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/2 tsp kosher salt
- 1/3 c minced dried crystallized ginger
- 8 oz cream cheese at room temp
- 1 stick unsalted butter at room temp
- 1/2 tsp orange zest
- 1/2 tsp pure vanilla extract
- 1/2 pound confectioners sugar (sifted)
- For Decoration:
- pieces of dried crystallized ginger
Mushroom Tartlets

Cut bread into rounds with cookie cutter
- 12 slices white and rye bread
- 1/2 c softened butter
- 1/2 lb finely chopped mushrooms
- 2 T minced onion
- 1 T beef bouillion
- 2 T wondra flour
- 1 c heavy cream
- 1 T freeze dried chives
- 2 tsp parsley flakes
- 1/2 tsp lemon juice
- 1/4 tsp salt
- 1/8 tsp cayenne
- parmesan cheese
Peanut Butter Cookies

Cream butter and sugars with egg and vanilla and beat until fluffy
- 1/2 c butter
- 1/2 c peanut butter
- 1/2 c sugar
- 1/2 c light brown sugar
- 1 egg
- 1 tsp vanilla
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 c flour.
Honey Sesame Shrimp on the Barbie

Rinse the shrimp under cold water, drain and blot dry with paper towels
- 1 1/2 pounds jumbo shrimp, peeled & deveined
- 5 TBSP Asian (dark) sesame oil
- 3 TBSP rice wine, sake or dry sherry
- 3 TBSP soy sauce
- 1 1/2 TBSP honey
- 1/2 tsp Chinese five-spice powder (in spice section)
- 2 cloves garlic crushed
- 2 slices (1/4 inch thick) fresh ginger
- 2 scallions, trimmed, white part flattened with side of cleaver, green part finely chopped and set aside for garnish.
Barbecue Sauce

Simmer all ingredients for about half an hour
- 1 tsp salt
- 1 tsp chili powder
- 1/4 c light brown sugar
- 1/4 c vinegar
- 1/4 c worcester
- 1 c ketchup
- 2 c water
- tabasco
Teriyaki Sauce

Blend all ingredients. Pour over beef, poultry or shrimp
- 1/2 c soy sauce
- 1/3 c oil
- 2 T light corn syrup
- 2 T white wine vinegar
- 2 minced garlic cloves
- 1 tsp ground ginger
- 1 tsp dry hot mustard
Gingerale (or cola) Basted Ham

Preheat oven to 325 degrees
- 1 18 lb cured ham
- 2 12 oz cans gingerale (or cola)
- canned pineapple rings
- brown sugar
- maraschino cherries
- cloves
Eggplant Parmesan

Wash, peel and cut eggplant into 1/2 inch rounds
- 2 lb eggplant
- flour
- olive oil
- 1/3 c grated parmesan
- 2 c shredded mozzarella
- 4 T olive oil
- small finely chopped onion
- 1 minced garlic clove
- 35 oz plum tomatoes (chopped)
- salt/pepper
- freshly chopped basil
