- 3 Tbsp Olive oil
- 1 small onion, sliced
- 1 lb ground turkey
- 1 clove garlic (on toothpick)
- 1 can red kidney beans
- 29 oz tomatoes
- 2 Tbsp chili powder
- Salt/paprika
Beef Tenderloin

Preheat oven to 425 degrees
- 1 beef tenderloin (4-5 pounds,) tied
- Coarse salt and freshly ground pepper
- 1/4 cup extra virgin olive oil
- 8 ounces shitake mushrooms
- 1 bunch fresh thyme sprigs
Banana Pudding

- 3/4 cup plus 1 T sugar
- 1/3 cup cornstarch
- Pinch of salt
- 3 cups milk
- 8 eggs, separated
- 3 T butter
- 1 T vanilla extract
- 3 cups vanilla wafer cookies
- 4 ripe bananas, thinly sliced
- 1/2 tsp cream of tartar
Aunt Amelia's Famous Pizza

- 3/4 pound provolone cheese
- 2 pounds of pizza dough
- 1-2 medium sized onions
- 1/2 cup Berio olive oil
- 28 oz sized cans of Redpack whole/peeled tomatoes in puree
- 1/2 tsp salt/pepper

Chocolate Fudge Drops

Lightly grease cookie sheet
- 2 c flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 c softened unsalted butter
- 1 c light brown sugar
- 1 egg
- 4 oz unsweetened chocolate (melted)

- 3/4 c milk

- 1 lemon
- 2 Tbsp butter
- Olive oil

Baked Artichoke Hearts Casserole

Preheat oven to 325 degrees
- 1 1/2 cups Progresso Italian flavor bread crumbs
- 1/4 cup finely chopped fresh flat parsley
- 2 ounces Parmesan cheese, grated ( 1/4 cup )
- 2 ounces Pecorino Romano, grated ( 1/4 cup )
- 1 Tbsp mixed dried herbs (Italian seasoning blend)
- 1 tsp coarse salt
- Freshly ground pepper
- 3 pkgs (9 ounces each) frozen artichoke hearts,
- thawed & drained
- 2/3 cup extra virgin olive oil, plus more for baking

Braised Short Ribs

One of Jeana's favorite meals
- 5 pounds short ribs cut in sections
- 1/4 c olive oil
- 1/4 cup carrot diced
- 1/4 cup celery diced
- 1/2 cup onion diced
- 1 clove garlic minced
- 1/2 T tomato paste
- 1 1/2 cup Merlot wine
- 1 T flour
- 1/2 gallon beef stock
- 1 sprig rosemary
- 2 sprigs parsley
- 2 bay leaves
- salt and pepper to taste
Veal Bolognese

Put the oil/butter and chopped onion in pot and turn the heat to medium
- 1 T olive oil
- 3 T butter
- 1/2 c chopped onion
- 2/3 c chopped celery
- 2/3 c chopped carrot
- 3/4 lb ground veal
- salt
- pepper (ground fresh from mill)
- 1 c whole milk
- whole nutmet (freshly ground)
- 1 c dry white wine
- 1 1/2 c canned imported Italian
- plum tomatoes, cut up
