Potato Salad

Put potatoes in large pot and boil until cooked but not mushy, firm
- 5 pounds russet potatoes
- Dozen eggs
- Italian parsley
- Celery salt
- Chopped celery

Sweet Potato Casserole

This is a large recipe, I would cut it down in half
- 7 pounds sweet potatoes
- Streusel
- 1/2 cups flour
- 1/2 cup packed brown sugar
- 1/4 tsp kosher salt
- 5 T unsalted butter, cut into 5 pieces and softened
- 1 cup pecans
- Filling
- 5 T unsalted butter, melted
- 4 tsp lemon juice
- 1 T vanilla extract
- 2 tsp kosher salt
- 1/2 tsp pepper
- 1/2 tsp ground nutmeg
- granulated sugar
- 4 large egg yolks
- 1 1/2 cups half and half
Lentil Soup

Make the soup base..... In a large pot over medium heat, warm the olive oil
- 3 T olive oil
- 2 oz pancetta (I use leftover ham)
- 1 small yellow onion, chopped
- 2 large garlic cloves, minced
- 1 carrot, finely chopped
- 1 celery, finely chopped
- 1 T minced fresh sage
- 2 cups lentils
- 1 cup canned whole plum tomatoes, chopped with juice
- 6 cups chicken broth, plus more if needed
- 1 T salt plus more to taste
- 1/4 lb ditalini pasta
- freshly ground pepper to taste
Herbed Rib Roast

Grind the peppercorns and bayleaves with the salt to a powder in an electric grinder then transfer to mortar
- 7-8 lb prime rib (3 - 4 ribs)
- 1 T whole black peppercorns
- 2 bay leaves (not California)
- 1 T kosher salt
- 3 garlic cloves
- 1 tsp freshly chopped thyme
- 1 tsp freshly chopped rosemary
- 1 T olive oil
Cranberry Bread

Preheat oven to 350 degrees
- 2 c flour
- 1/2 c sugar
- 1 Tbsp baking powder
- 1/2 tsp salt
- 2/3 c freshly squeezed oj
- 2 slightly beaten eggs
- 3 Tbsp unsalted butter (melted)
- 1/2 c chopped walnuts (coarse)
- 1 1/4 c cranberries
- 2 tsp grated orange peel

Mix the meatball mixture, hamburg, seasoning, chopped onion, rice, Parmesan cheese, bread crumbs, parsley and egg

If you can't find Emeril's spice: 1 T mild paprika 2 tsp light brown sugar 1 1/2 tsp hot paprika 1/2 tsp celery
- Emeril's Original Essance mix
- 8 lbs pork butt roast
- 2 c cider vinegar
- 1 1/3 c water
- 5/8 c ketchup
- 1 1/4 c firmly packed brown sugar
- 5 tsp salt
- 4 tsp ground black pepper
- 1 tsp ground white pepper
- 1 T Liquid smoke

- 1 envelope Birds imported English custard

- 1 c heavy cream

Apple Pie

- Filling:
- 1 cup sugar
- 1 tsp cinnamon
- 4 Tbsp flour
- Dash salt
- 6-7 cups thinly sliced and pared 20 oz apples
- 5-6 good sized pats of unsalted butter.
- Crust:
- 2 cups flour
- 1 tsp salt
- 3/4 cup shortening
- 5-6 Tbsp iced water
