Veal Parmesan

Preheat oven to 350 degrees
- Sauce:
- 3 veal cutlets
- 3 Tbsp oil
- 3 minced garlic cloves
- 1 medium onion, finely chopped
- 35 oz can Tuttorossa whole tomatoes
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp basil (or about 3 fresh leaves chopped)
- Pinch of oregano
- Veal prep:
- 1/4 c Italian flavored bread crumbs
- 1/4 c parmesan cheese
- 3 Tbsp olive oil
- 1/2 lb shredded mozzarella
- 1/2 lb sliced mushrooms that have been sautéed in a small amount of butter

Preheat oven to 500 degrees for about 30 minutes
- Eye of the round roast
- Kosher salt/fresh ground peppercorns
Spaghetti Carbonara

In large sauté pan, heat the oil over a medium flame
- 2 Tbsp olive oil
- 1 pound pancetta (diced into 1 inch cubes-)
- 1/2 tsp freshly ground black pepper
- 6 large eggs (at room temp)
- 1/2 c heavy cream (at room temp)
- 1 1/4 cup freshly grated Parmesan cheese
- 1/2 tsp kosher salt
- 1 lb spaghetti
- 2 Tbsp chopped fresh flat leaf parsley
Arrabiata Penne

Bring a large pot of water to a boil
- Kosher salt
- 1 pound penne rigate with ridges
- 1/4 cup olive oil
- 3 cloves chopped garlic
- 1 35 oz can chopped tomatoes
- 1/2 tsp red pepper flakes (This is for the spicer version...for all you wimps cup it down to 1/4!)
- 1/2 tsp Italian seasoning
- 6 leaves freshly chopped basil (actually more)
- Parmigiano Reggiano
Shrimp FraDiavlo

In a medium bowl, toss the shrimp with 1 tsp of salt and red pepper flakes
- 1 lb large shrimp, peeled and deveined
- 1 tsp salt + more to taste
- 1 tsp dried crushed red pepper flakes
- 3 Tbsp olive oil
- 1 finely chopped medium onion
- 14 1/2 oz can diced tomatoes with juices
- 1 cup dry white wine
- 3 chopped garlic cloves
- 1/4 tsp dried oregano leaves
- 3 Tbsp chopped fresh flat leaf parsley
- 3 Tbsp chopped fresh basil
Pumpkin Pie

Prepare an unbaked pastry shell for 9 inch pan, you can find it under the apple pie recipe
- 3 eggs
- 1/3 c sugar
- 1/3 c light brown sugar
- 2 cups pure pumpkin
- 1 tsp ginger
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp allspice
- 1/4 tsp cardamom
- pinch salt
- 3/4 c heavy cream
- 3/4 c half and half
Red Wine Vinagrette

Mix vinegar, lemon juice, honey and 2 tsp salt
- 1/2 cup red wine vinegar
- 3 Tbsp lemon juice
- 2 tsp honey
- 2 tsp salt + more to taste
- 1 cup olive oil
- Freshly ground pepper
Escarole, Sausage & Potatoes

In large skillet over medium heat, cook sausage till browned on all sides
- 1 1/2 lb hot or sweet Italian
- sausage
- 3 large potatoes (cut into bite
- sized chunks)
- 2 medium onions (cut in
- quarters)
- 2 crushed garlic clove
- 3/4 tsp salt
- 1 small head escarole (chopped)
