Jammin' Jambalaya

This is a great one pot meal that can be made in less than 45 minutes-reheats well too
- 3 slices bacon, cut into 1 inch pieces
- 1/2 cup chopped celery
- 1/2 green bell pepper, seeded and chopped
- 1/2 medium onion, chopped
- 1/2 lb ham cubed
- 1/2 lb chicken cubed
- 1/2 lb smoked sausage, 1/2" slices
- 1 (14.5 ounce) cans crushed tomatoes, with liquid
- 1 cup beef broth
- 1 cup chicken broth
- 1/2 teaspoon dried thyme
- 1 teaspoon Cajun seasoning*
- 1 teaspoon Tabasco or other hot sauce
- 2 cups uncooked white rice
- 1/2 pound salad shrimp
Best Odds Brisket Marinade

Marinating a brisket is really a great way to make sure your smoked brisket remains tender and juicy
- • 1 cup red wine vinegar
- • 1/2 cup olive oil
- • 1/4 cup worcestershire sauce
- • 1/4 cup brown sugar
- • 4 cloves garlic, minced
- • 2 tablespoons paprika
- • 1 tablespoon kosher salt
- • 2 teaspoons black pepper
Mostaccioli Quatro Formaggio-Olive Garden

QUATRO FORMAGGIO MIX-Blend 4 cheeses thoroughly and place in a covered container in fridge
- 4 cups Cooked Mostaccioli
- 2 tsp Salad oil per 1c pasta
- 2 cups Heavy cream per person
- Parsley
- Parmesan -- grate 1/2 cup
- QUATRO FORMAGGIO MIX
- 8 oz Mozzarella -- shred/per person
- 4 oz Provolone -- shred/per person
- 4 oz Parmesan -- grate/per person

Apple City BBQ Rub

- 5 tbps coarse ground black pepper
- 5 tbps Paprika
- 3 tbps chili powder
- 3 tsp celery salt
- 2-1/2 tsp garlic powder

English Bangers and Mash

Classic British pub grub makes a great quick and easy meal
- 2 tbsp vegetable oil
- 8 beef or pork sausages
- 1 12 oz can Guinness or other strong dark lager
- FOR THE MASH
- 2 lb potatoes, quartered
- 1/3 cup milk
- 1 stick butter, cubed
- Salt and pepper to taste
- FOR THE ONION GRAVY
- 2 medium onions, peeled and thinly sliced
- 2 tbsp vegetable oil
- 2 tbsp butter
- 1 tsp sugar
- 1 tbsp ground sage
- 1 tsp balsamic vinegar
- 2 cups beef stock
- 4 tsp corn starch
- 4 tsp cold water
- Salt and pepper to taste

Slice meat into 1/2" strips
- 1 1/2 lbs. steak (flank, skirt, or london broil work best)
- 2 tbsp oil
- Fajita Marinade of your choice
- Guacamole (recipe of your choice)
- Pico De Gallo (recipe of your choice)
- Lettuce (shredded)
- 1 bell pepper (green)
- 1 bell pepper (red)
- 1 bell pepper (yellow)
- 1 onion (sliced with the grain)
- 2 cups shredded cheese
- 8 tortillas (corn or flour)

Another approach to a brisket marinade
- • 1 1/2 cups red wine
- • 1/2 cup olive oil
- • 1 1/2 tablespoons mustard
- • 1 1/2 tablespoons lemon juice
- • 1 tablespoon wine vinegar
- • 1 tablespoon horseradish
- • 1 1/2 teaspoons salt
- • 1 teaspoon cayenne pepper
- • 1 teaspoon onion powder
- • 1 teaspoon garlic powder
Shrimp Cristoforo-Olive Garden

Remove any large stems from basil and wash leaves
- -----BASIL BUTTER-----
- 2 oz Fresh basil leaves (2 bunches)
- 10 oz Butter -- softened(about 2 1/2 cubes)
- 1 tsp Garlic -- minced
- 1/4 tsp Salt
- 1/8 tsp Black pepper
- 3 tbsp Grated parmesan cheese plus additional for garnish
- 1 tbsp Grated Romano cheese

- 1 lb Fresh Linguine or angel hair pasta
- 1 lb Medium shrimp -- shelled

- 1 cup white wine
- 1/2 cup unsalted butter, melted (do not use margarine)
- 3 tablespoons minced garlic
- 1 pound shrimp, peeled and deveined
