Easy Sausage Empanadas

Great appetizer for any occasion
- 1/2 pound bulk pork sausage
- 1 1/2 cups shredded cheese
- 1/8 cup finely chopped onion
- 1/2 tsp garlic powder, divided in half
- 1/8 tsp ground cumin
- 1/8 tsp dried oregano
- 1 large egg, separated
- 1 tbsp butter
- 1 (15-ounce) package prepared pie crusts (2 crusts)
Chili Con Queso

If you like your Mexican food made completely from scratch, this is a must have recipe
- 1/2 medium onion (diced)
- 4 cloves of garlic (minced)
- 3 Serrano peppers (diced)
- 3 jalapeno peppers (diced)
- 2 tbsp butter
- 2 tbsp flour
- 1 cup milk
- 6 cups shredded cheese, can use any combination of Longhorn cheddar and Monterrey Jack
- 1/2 cup cilantro (chopped)
- 2 plum tomatoes, peeled and diced (about 1 cup, can use canned if tomatoes aren’t in season)
- 1/2 cup of sour cream
- Salt to taste
Queso Blanco (White Mexican Cheese Dip)

A traditional Mexican white dipping sauce served with chips or hot flour tortillas for dipping
- 3 cups Monterey Jack cheese or Asadero/Chihuahua cheese, shredded fine
- 12 ounces green chilies, diced and drained (I used 3 4 ounce cans)
- 2 cups half and half
- 1 medium yellow onion, diced fine
- 3 tablespoons flour
- 1 teaspoon cumin
- 1 teaspoon Mexican oregano
- 2 peppers, serrano or jalapeno, seeded and diced fine
- 3 tablespoons cilantro, chopped fine for garnish
Lemon Pudding Cakes

A Good Housekeeping recipe
- 1/3 cup Sugar, plus additional for ramekins
- 1/4 cup All-Purpose Flour
- 1/4 teaspoon Salt
- 2 regular Lemons
- 3 large Eggs, separated
- 2 tablespoon Butter or Margarine, melted and cooled
- 1 cup Whole Milk
- 1 pint Raspberries, for garnish
- Fresh Mint sprigs, for garnish
Shrimp Pasta-Red Lobster

This recipe was given to me by a former Red Lobster employee
- 1/3 cup olive oil
- 3 cloves garlic, minced
- 1 lb. shrimp, peeled, deveined, tails removed
- 2/3 cup. clam juice, or chicken broth
- 1/3 cup dry white wine
- 1 cup heavy (whipping) cream
- 1/2 cup freshly grated parmesan cheese (plus additional for serving, if desired)
- 2 tbsp. lemon juice
- 2 tbsp chopped parsley
- 1/4 tsp each dried basil leaves
- 1/4 tsp dried oregano leaves, crushed
- 1 pkg linguine pasta, cooked and drained
Maryland Crab Cakes

This recipe is similar to many of the ones used by East Coast veterans
- • 1/2 tsp. garlic minced
- • 1 tbsp. onion minced
- • 1 tbsp. celery diced
- • 2 tbsp. mayonnaise
- • 1 whole egg
- • 1/8 tsp. salt
- • 1/8 tsp. black pepper
- • 1 tsp. Dijon mustard
- • 1 tsp. Old Bay Seasoning
- • 1/4 cup bread crumbs
- • 1 pound lump crab meat
- • 2 tbsp. oil for sautéing

1.In a large bowl, dissolve yeast in warm water
- 2 (.25 ounce) packages active dry yeast
- 2 1/2 cups warm water (110 degrees F/45 degrees C)
- 2 teaspoons salt
- 2 tablespoons vegetable oil
- 7 cups all-purpose flour
- 1 tablespoon cornmeal
- 1 egg white
- 1 tablespoon water

- 2 quarts water
- 1/2 teaspoon black pepper
- 1 pound smoked ham pieces
- 1 small onion, chopped
- 1 cup butter or margarine
- 1 1/2 cups flour
- 2 cups cold milk plus more if necessary
- 1/2 to 3/4 cup beer, depending on your taste
- 12 ounces sharp Cheddar cheese, grated
- 12 ounces sausage,( bulk or links ) cooked
