Tom's "Off the Hook" Rib Rub

This is my own concoction using a base recipe from a BBQ blog
- 1 1/2 Cup Brown Sugar
- 1/4 Cup Paprika
- 2-1/2 TBS Course Black Pepper
- 1-1/2 tsp Chili Powder
- 1-1/2 TBS Garlic Powder
- 1-1/2 TBS Onion Powder
- 2 tsp Cayenne Pepper
- 2 TBS Kosher Salt
- 1 TBS Cumin
"Goodness Gracious Sakes Alive" Barbecue Sauce

This sauce come from the same blog as the the rib rub
- 2 Cups Ketchup
- 1/4 Cup Molasses (If you are using a really strong flavored molasses like Brer Rabbit® reduce amount to
- 1/8 Cup equivalent to 2 TBS)
- 3 tsp Worcestershire Sauce
- Juice from 1/2 Fresh Lemon (Approx. 2 TBS)
- 1/2 tsp Tabasco® Brand Hot Sauce
- 3/8 Cups Dark Brown Sugar
- 1/2 tsp Cayenne (Red Pepper)
- 2 Cloves Minced Fresh Garlic
- 1 TBS Course (Salad Grind) Black Pepper
- Note: for a milder sauce, cut the Black Pepper to 1/2 TBS instead of a full TBS.
Chicken With Creamy Paprika Sauce

1. In 3 1/2- to 4-quart slow cooker, place chicken and onion
- 10 chicken thighs (about 3 lb), skin removed
- 1 medium onion, sliced
- 3 tablespoons chicken broth
- 2 tablespoons paprika
- 1/2 teaspoon salt
- 3 cups uncooked egg noodles
- 3 tablespoons cornstarch
- 3 tablespoons cold water
- 1 container (8 oz) sour cream-and-chive potato topper

An award winning BBQ sauce recipe that I have tinkered with to fit my tastes
- 2 cups ketchup
- 1/2 cup Jack Daniel's Tennessee Whiskey
- 1 cup cider vinegar
- 1 cup honey
- 1/4 cup Worcestershire sauce
- 1 tablespoon chili powder
- 1-1/2 teaspoons black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground cinnamon
- 1 TBS Liquid Smoke
Chipotle Barbecue Sauce

This is a classic style barbecue sauce with the added smokey flavor of chipotles (smoked jalapenos)
- 2 cups ketchup
- 1/2 cup chopped onion
- 1/2 cup water
- 2 cans chipotle chile, chopped
- 1/4 cup brown sugar
- 2 tablespoons oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon worcestershire sauce
- 2 cloves garlic, minced
- 1/2 teaspoon celery salt
- 1/2 teaspoon black pepper
KC BBQ Sauce

In a large saucepan over medium heat, mix together the ketchup, tomato sauce, brown sugar, wine vinegar, molasses, ...
- 2 cups ketchup
- 2 cups tomato sauce
- 1 1/4 cups brown sugar
- 1 1/4 cups red wine vinegar
- 1/2 cup unsulfured molasses
- 4 teaspoons hickory-flavored liquid smoke
- 2 tablespoons butter
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon celery seed
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 teaspoon coarsely ground black pepper
Jack Daniel's BBQ Sauce

This barbecue sauce built on the foundation of whiskey
- 1 1/2 cups ketchup
- 1 medium onion, chopped
- 1/4 cup brown sugar
- 2 1/2 tablespoons apple cider vinegar
- 2 tablespoons vegetable oil
- 2 tablespoons Jack Daniel's Whiskey
- 2 clove garlic, minced
- 1/2 teaspoon dry mustard
- 1/2 teaspoon hot pepper sauce

- 1/2 oz vodka
- 1/2 oz Bailey's® Irish cream
- 1/2 oz Kahlua® coffee liqueur
- 1 oz cream
Medallions of Beef

- Marinade:
- 4 medallions of beef tenderloin(about 1 1/2 inches thick)
- 1/4 cup lime juice
- 1/4 cup honey
- 3 tablespoons vegetable oil
- 2 tablespoons minced onion
- 2 tablespoons fresh ginger, minced
- 1 tablespoon curry powder
- Sauce:
- 1/2 cup pureed mango
- 1/4 cup white wine
- 1/4 cup beef stock
- 1/4 cup chopped shallots
- 2 tablespoons vegetable oil
- 2 tablespoons warm water
- 1 tablespoon sugar
