Apple City BBQ Sauce

This is a world championship BBQ Sauce that I got from the newspaper about 10 years ago
- 1 cup ketchup
- 1/4 cup soy sauce
- 1/4 cup cider vinegar
- 1/4 cup apple juice
- 2 tbps Worcestershire Sauce
- 1 small sweet onion, food processed to a pulp
- 1/2 green bell pepper, food processed to a pulp
- 1 small sweet apple, food processed to pulp
- 3/4 tsp garlic powder
- 3/4 tsp ground white pepper
- brown sugar to taste
Pico De Gallo

A Mexican Restaurant owner in Playa Del Carmen once told me
- 3 Roma tomatoes, diced
- 1 Tomatillo
- 1 lime, juiced
- 1 white onion, finely chopped
- 1/2 fresh jalapeno pepper, seeded and chopped
- 1/4 cup fresh cilantro, finely chopped
- 1 green onion, finely chopped
- 1/2 teaspoon garlic powder
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon cumin
- 1/2 teaspoon paprika
- dash of olive oil (optional)
Tom's Tuscan Penne Shrimp

Goes great with Garlic Bread and White Wine!
- 12 oz.Penne Pasta,
- 4 slices bacon or pancetta(chopped)
- 16 oz.Heavy Whipping Cream,
- 2 tbsp. Butter,
- 1/2 cup Parmesan Cheese,
- 1 tbsp. minced garlic,
- 1 cup of mushrooms,
- 1 1/2 lbs. shrimp,
- salt & pepper.
- Parsley flakes to garnish
Corn Dogs

A homemade Corn Dog recipe
- 2 Cups Yellow Cornmeal
- 1/2 Cup Flour plus more for dusting on the Hot Dogs
- 1 Tsp Fresh Baking Powder
- 1 Tsp Salt
- 1 Egg Beaten
- 2 Cups Buttermilk
- 2 Tbsp Bacon Drippings or Peanut Oil
- 8 Hot Dogs; preferably all beef
- 8 Thin Sticks With Pointy Ends (some People Use Chopsticks, I used sticks designated for candy apples.)
Baked Cheesy Chicken and Pasta

Chicken Breasts served over a bed of cheesy Pasta
- 4 Chicken Breasts(6-8 oz.)
- 8 oz. Pasta(shells, penne, or masticoilli work best)
- 2 cups whole milk
- 1 cup boiling water
- 1 cup heavy cream
- 1 cup each shredded cheese(I prefer Sharp Cheddar, asiago, and provolone)
- 1/4 cup stick butter
- 1 egg
- 1/2 cup bread crumbs
- 1/4 cup Parmesan cheese
- 1 tsp. italian seasoning
- 1 tsp garlic powder
- 1 tsp. onion powder
- 2 TBSP. scallions
Orange Chicken-Panda Express

This is a copycat recipe for the famous Chinese fast food restaurant
- Orange Sauce for Stir Fry:
- 2 pounds boneless chicken pieces, skinned
- 1 egg
- 1 1/2 teaspoons salt
- White pepper
- Oil (for frying)
- 1/2 cup plus 1 tablespoon cornstarch
- 1/4 cup flour
- 1 tablespoon minced ginger root
- 1 teaspoon minced garlic
- Dash crushed hot red chiles
- 1/4 cup chopped green onions
- 1 tablespoon rice wine
- 1/4 cup water
- 1/2 to 1 teaspoon sesame oil
- 2 teaspoons minced zest and 1/4 cup juice from 1 large orange
- 1/2 teaspoon granulated sugar
- 2 tablespoons chicken stock
- 1 tablespoon light soy sauce
Pancake Mix-IHOP

The pancake mix that made IHOP famous across America
- Nonstick Spray
- 1 1/3 c. flour
- 1 egg
- 1 c. buttermilk
- 1/4 c. granulated sugar
- 1/8 c. cinnamon
- 1 heaping tsp baking powder
- 1 tsp baking soda
- 1/4 c. cooking oil
Cheese Enchiladas Acapulco

* Note: Mexican chocolate and mole sauce are available at most Latino grocery stores and well-stocked supermarkets
- ENCHILADA SAUCE:
- 5 cups chicken broth
- 3 tablespoons chile powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1 1/2 teaspoons grated Mexican chocolate-see * Note
- 1 1/2 teaspoons canned mole sauce-see * Note
- Salt to taste
- 1/4 cup oil
- 5 tablespoons flour
- ENCHILADAS:
- 2 tablespoons shortening or vegetable oil
- 8 corn tortillas
- 1/2 pound Jack or Cheddar cheese shredded

Cole Slaw Recipe-KFC

- 8 1/8 cups cabbage
- 1/3 cup carrot
- 1 teaspoon onion, chopped fine
- 3/4 cup buttermilk
- 1/2 cup mayonnaise
- 1/8 cup milk
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/8 teaspoon pepper

- 1 1/4 cups catsup
- 1/3 cup white vinegar
- 1/4 cup molasses
- 1/4 cup honey
- 1 teaspoon liquid smoke flavoring
- 1/2 teaspoon salt
- 1/4 teaspoon onion powder
- 1/4 teaspoon chili powder
- 6 to 8 cups vegetable oil
