Oven-Fried Tilapia

Preparation: Rinse tilapia fillets with cold water; pat dry
- Ingredients:
- •1 to 1 1/2 pounds tilapia fillets
- •2/3 cup flour
- •3/4 cup plain bread crumbs
- •1/4 cup cornmeal
- •1/2 teaspoon Creole seasoning
- •1/2 teaspoon salt
- •1 teaspoon dried parsley flakes
- •1/2 teaspoon dried leaf thyme, crumbled
- •2 large eggs
- •2 tablespoons milk
- •2 to 3 tablespoons melted butter, optional
Peanut Butter Power Balls

These are packed with protein;
- 1 cup peanut butter
- 1/2 cup non-fat dry milk powder or soy protein powder
- 1/2 cup raisins or chocolate chips
- 1/4 cup honey
- Graham cracker crumbs
- Mix all ingredients except the graham cracker crumbs in a large bowl. Shape mixture into 1-inch balls. Roll in crumbs and refrigerate (or freeze; balls will thaw by lunchtime).
Broccoli and Cauliflower Casserole

- 10 ounces broccoli florets
- 10 ounces cauliflower florets
- 1/2 cup butter
- 1 onion, chopped
- 1 pound processed cheese food, cubed
- 1 (10.75 ounce) can condensed cream of chicken soup
- 5 3/8 fluid ounces milk
- 1 1/2 cups crushed buttery round crackers
Cauliflower and Bacon Gratin

Place an oven rack in the center of the oven

- Unsalted butter, for dish, plus 1/2 stick (4 tablespoons), cut into 1/2-inch pieces
- 3 slices day-old sourdough bread or 2 cups bread crumbs
- 3/4 cup heavy cream
- 1 teaspoon all-purpose flour
- 1/4 cup capers, rinsed and drained
- 8 ounces bacon, cooked until crispy and cut into 1/2-inch pieces
- 1 cup grated Gruyere, divided
- Kosher salt and freshly ground black pepper
- 1 pound cauliflower, trimmed and cut into florets
- Olive oil, for drizzling
