Directions Preheat the oven to 425 degrees F
- Ingredients
- 2 large red potatoes, scrubbed, cut into large cubes
- 1 large sweet potato, peeled, cut into large cubes
- 1 carrot, peeled, cut into 2-inch pieces
- 2 parsnips, peeled, cut into 2-inch pieces
- 1 large red onion, peeled and cut into 1/8ths
- 1/4 cup olive oil
- Kosher salt and freshly ground black pepper
- 3 tablespoons melted butter
- 2 tablespoons chopped fresh parsley
- Flaky sea salt

- 1 1/2 cups flour
- 1 1/2 tsp. baking powder
- 1/2 cup sugar
- 1/2 tsp. salt
- 1 egg
- 1/2 cup vegetable oil

This is a good vegetable soup that you can change for vegetables
- stock:
- 3 cups beef broth
- 2 cups water
- 1 can tomato Sauce
- 2 cups tomato juice(or pureed stewed Tomatoes)
- 2 Tab.dried parsley flakes
- 1 clove garlic , minced
- 2 tesp. Dried Basil
- 1 teasp. dried oregano
- 1 teasp. Salt
- 1/4 teasp coarse black pepper
- 1 teasp.Sugar
- vegetables:
- 2 onions, chopped
- 1 can Kidney beans, undrained
- 2 large carrots
- 1 zucchini. diced
- 1 cup corn
- optional vegetables
- summer squash
- shreeded cabbage
- turnips
- green beans
- Pasta

- 1 1/2 cups grated cheddar cheese
- 1 cup chopped red bell pepper
- 1/4 cup chopped green onion
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 (10.5 oz.) bag coarsely crushed Chili Cheese Fritos corn chips
- Salt and pepper, to taste.

Cream these together well
- 2 cups sugar
- 1 cup vegetable oil
- 4 eggs, one at a time, mixing well after each addition.
- 2 cups grated carrots
- 2 cups flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 1/2 tsp. cinnamon
- 1/2 cup of ground walnuts
- Add to the egg mixture and mix well.
- 4 ounces of cream cheese
- 1/2 cup butter
- 1 1/2 cup icing sugar
- 1 tsp. vanilla
- pinch of salt

- Ingredients:
- 1 large head cauliflower
- 4 oz. low fat cream cheese (do not use fat free)
- 1/2 cup low fat sour cream (do not use fat free)
- 1/4 cup minced green onions
- 1/4 cup freshly grated parmesan cheese (If you only have finely grated Parmesan, use a bit less)
- 6 slices bacon, cooked until very crisp, fat blotted with paper towel and then crumbled
- 1 cup reduced fat sharp cheddar cheese
