Oven Fried Chicken

- 1/2 sleeve (about 20) whole-grain salted crackers, pulsed in a food processor until fine (about 1/2 cup)
- 2 1/2 cups corn cereal flakes, pulsed in a food processor to fine crumbs (about 1/2 cup)
- 2 tablespoons sesame seeds
- 3/4 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 2 egg whites
- 1 cup lowfat, plain yogurt
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- Olive oil cooking spray
- 4 medium sized skinless chicken breasts and 4 skinless chicken thighs, rinsed and patted dry (about 3 1/2 pounds chicken)
Parmesan Hash Brown Cups

Directions Preheat oven to 350 degrees
- Servings: makes 12
- Ingredients
- 1 (20 oz) bag Simply Potatoes Shredded Hash Browns; OR 3-1/2 cups shredded russet potatoes, rinsed and squeezed dry in a towel
- 3 green onions, chopped (approx. 1/3 cup), both white and green parts
- 1/2 cup grated Parmesan cheese
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 tablespoon olive oil
Apples and Cream Cheese Dip

Directly after coring apples, place them in a large bowl and pour orange juice on them
- 5 medium apples; cored and sliced
- 1/2 cup orange juice
- 1 8-oz. package of cream cheese; at room temperature
- 2 tablespoons brown sugar
- 1 1/2 teaspoons vanilla
Crunch Crazy Asparagus Spears

- 1 pound medium asparagus (about 20 spears)
- 2 egg whites
- Kosher salt and freshly cracked black pepper
- 1 tablespoon mayonnaise
- 2 cups panko breadcrumbs
- 1/2 cup grated Parmesan
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- Extra-virgin olive oil
Herbed Zucchini Cheese Bread

Preparation Combine dry ingredients, herbs, green onions or shallots and cheese; stir to mix well
- Ingredients
- 2 cups all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 3/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/8 tsp. cayenne pepper
- 2 T. your favorite fresh herbs, chopped, such as dill and parsley, or rosemary, basil, and oregano
- 2 T. green onions or shallots, finely chopped
- 1 cup sharp cheddar cheese, grated
- 2 eggs
- 1/4 cup olive oil
- 1/2 cup milk
- 1 cup zucchini, shredded
Pimiento Cheese Spread

Place the drained pimientos in a blender or food processor and puree until smooth
- Two 7-ounce jars canned, sliced pimientos, drained
- Three 10-ounce bricks sharp Cheddar, finely grated
- 1 cup mayonnaise
- White sandwich bread
Tomato Jam

Combine all ingredients in a large, non-reactive pot
- 5 pounds tomatoes, finely chopped
- 3 1/2 cups sugar
- 8 tablespoons lime juice
- 2 teaspoons freshly grated ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1 tablespoon salt
- 1 tablespoon red chili flakes
Great Northern Bean Soup

Directions: Soundstage Restaurant, Disney-MGM Soak beans in water to cover overnight
- Ingredients:
- 1/2 pound Dried great northern beans
- 10 cups Water
- 4 Chicken bouillon cubes
- 3/4 cup Celery, minced
- 1 cup Onion, minced
- 1 cup Carrot, minced
- 1 cup Smoked ham, minced
- 3/4 cup Tomato, minced
- 1/4 teaspoon Salt
- 1/4 teaspoon White pepper
- 1/4 teaspoon Ground thyme
- 1/4 cup Cornstarch dissolved in
- 2/3 cup Water
Cheesy Squash Casserole

Directions Preheat the oven to 350 degrees F
- Ingredients
- 1 tablespoon vegetable oil
- 6 medium yellow summer squash, thinly sliced
- 1 large Vidalia onion, thinly sliced
- 1 tablespoon butter
- 1/2 cup grated Parmesan
- 1 cup shredded sharp Cheddar
- 1/2 cup sour cream
- Salt and freshly ground black pepper
- 1 sleeve crackers, crushed medium to fine (recommended: Ritz)
