- 1 1/4 cups granulated sugar
- 3 eggs
- 1 egg yolk
- 1 cup fresh lemon juice
- lemon zest from 3 lemons

Mini Meatball Soup with Broken Spaghetti and Escarole

Preheat oven to 400°F. Season the meat with salt and pepper
- 1 1/2 pounds meatloaf mix
- Salt and pepper
- 1 cup panko breadcrumbs
- 1/2 cup milk
- A handful flat-leaf parsley, finely chopped
- 1/2 cup grated Parmigiano-Reggiano cheese
- 3 to 4 tablespoons grated onion
- 4 cloves garlic, 2 cloves finely chopped or grated, 2 cloves sliced
- 1 egg, lightly beaten
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/2 pound whole wheat spaghetti, broken into thirds
- 1 large or 2 medium onions, chopped
- A few grates of nutmeg
- 1 large or 2 medium heads escarole, cleaned and coarsely chopped
- 2 quarts chicken stock
- 1 Parm cheese rind
Perfectly Moist Vanilla Cupcakes

1. Pre-heat oven to 350F. 2
- What we need:
- 1 3/4 cup all purpose flour
- 1 tsp baking power
- 1/4 tsp baking soda
- 1/4 tsp salt

- seeds from 1 vanilla pod (optional)

- 1/2 cup milk

Cowboy Lasagna

Brown ground beef with spices - drain
- 1 . 1 lb of ground beef
- 2 . Minced onions - 4 tbsp
- 3 . Worcestershire sauce - generous sprinkling
- 4 . Parsley - roughly 3 tbsp, divided
- 5 . One can of tomato soup - 10 3/4 ozs
- 6 . One can of corn - 15.25 ozs
- 7 . Dried ground mustard - 3 tsp
- 8 . One package of tater tots - 32 ozs
- 9 . Salt and Pepper to taste
- 10 . Mozzarella cheese - roughly 4 cups
Pineapple Chicken

Clean and trim chicken and split between two Gallon Ziplock bags
- 2 1/2 C. White Sugar
- 1/2 C. Soy sauce
- 1 C. Pineapple juice
- 1 C. Ketchup
- 1/4 C. Red Wine Vinegar
- 2 T. Mustard
- 6-8 Boneless, Skinless Chicken Breasts (I used 2 Costco pouches per bag)
- 2 – 16 oz. can Crushed Pineapple or Pineapple tidbits or crushed, drained (use drained juice for above)
Slow Cooker Beef Barley Stew

Place all ingredients in a 5 quart slow cooker or Crock-pot
- 1 lb Beef Stew Meat, *diced small*
- 1 1/4 cups sliced or chopped carrot
- 1 1/4 cups chopped onion
- 3/4 cup chopped celery
- 5 Cups Water
- 1 tsp parsley flakes
- 1/4 tsp pepper
- 1 tsp granulated sugar
- 2 TBSP Beef Bouillon powder
- 1/2 cup pearl barley
- 15 oz can tomato sauce
