Oven-Fried Orange Chicken

•Preheat oven to 425 degrees F
- 5 chicken breasts, cut into bite sized pieces
- 2 eggs, beaten
- 2 cups Panko breadcrumbs
- 1/2 cup all-purpose flour
- 1 1/2 cups orange juice, fresh squeezed
- 1/4 cup soy sauce, low sodium
- 3 tablespoons light brown sugar, packed
- 3 tablespoons Mirin
- 1 1/2 tablespoons Sriracha
- 3 garlic cloves, minced
- 1 1/2 teaspoons fresh ginger, grated fine
- 1 tablespoon cornstarch
- Toasted Sesame seeds
- Green Onions, snipped

- 1 head(s) (small; about 1 1/2 pounds) cauliflower, cored and cut into small florets
- 2 tablespoon(s) olive oil
- 1 teaspoon(s) olive oil
- Kosher salt
- Pepper
- 1 (1 1/2-pound; 1-inch-thick) sirloin steak, cut into 4 portions, or 4 small 1-inch-thick steaks
- 1 teaspoon(s) chili powder
- 1/4 teaspoon(s) cayenne pepper
- 1 navel orange
- 4 scallions, thinly sliced
Havana Grilled Pork Chops

In large bowl, mix all ingredients except pork
- For Citrus Cilantro Vinaigrette:
- 4 pork chops (6-8 ounces each)
- 1/2 cup orange juice
- 2 limes, juiced
- 2 Tablespoons canola oil
- 1 Tablespoon white wine vinegar
- 3 garlic cloves, peeled and sliced
- 2 Tablespoons cilantro, minced
- 1/2 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- heavy pinch salt and pepper
- 1 Tablespoons olive oil
- 1 Tablespoon white wine vinegar
- 1 teaspoon yellow mustard
- 2 Tablespoons orange juice
- 1/2 lime, juiced
- 1 Tablespoons cilantro, minced
- 1/2 teaspoon dried oregano
- pinch salt and pepper
Island Chicken

Mix all the ingredients, except the chicken broth in a bowl and marinade overnight
- 6 skinless chicken breasts
- 3 T of lemon juice
- Zest of 1 lemon
- 2 cloves of garlic diced
- 2 t of dried oregano
- 2 1/2 t of soy sauce
- 1/2 c of vegetable oil
- 1/2 c of chicken stock
- salt and pepper to taste
Lemon Pasta

Bring a pot of water to boil
- 1/2 lb. pasta (I used Cavatappi but you could use anything.)
- 1 Lemon
- 1/2 c. grated Parmesan
- 2 oz. ricotta or cottage cheese
- 1/4 c. olive oil
- salt and pepper

- 3 cups warm water

- 2/3 cup white sugar

- 10 cups all-purpose flour
- 1/4 cup shortening

Eggs Benedict Strata

1.Spray an 8-inch baking dish with nonstick cooking spray
- Strata
- 6 whole English muffins
- 6 oz Canadian-style bacon, chopped
- 6 eggs
- 1 1/2 cups milk
- salt and pepper
- Hollandaise Sauce
- 3 egg yolks
- 1/2 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- dash of hot sauce
- 1/2 cup butter, melted and very hot
General Tso's Chicken

1 Place sauce ingredients in a quart jar with a lid and shake to mix
- 3 lbs boneless skinless chicken breasts, cut into chunks
- 2 cups green onions, sliced
- 8 small dried chilies, seeds removed (bird pepper or thai chilies are good)
- Cornstarch Slurry
- 1/4 cup soy sauce, low sodium preferred
- 1 egg, beaten
- 1 cup cornstarch
- Sauce
- 1/2 cup cornstarch
- 1/4 cup water
- 1 1/2 teaspoons fresh garlic, minced
- 3/4 cup sugar
- 1/2 cup soy sauce
- 1/4 cup white vinegar
- 1/4 cup sherry wine or 1/4 cup white wine
- 14 1/2 ounces chicken broth (a can)
Pizza Poppin Muffins

Combine 1 1/2 cups AP flour, the packet of yeast, sugar, salt, oregano, and basil in a large mixer bowl
- ◾2 3/4 cups all purpose (AP) flour
- ◾1 envelope "quick rise" yeast
- ◾2 Tbsp granulated sugar
- ◾1 tsp table salt
- ◾1 1/2 tsp dried oregano
- ◾1/2 tsp dried basil
- ◾1 1/4 cups very warm water
- ◾120 - 130 degrees F
- ◾1 Tbsp canola or vegetable oil
- ◾3/4 cup mini pepperoni
- ◾could use chopped deli meats
- ◾1/4 cup chopped cooked bacon
- ◾1/4 cup finely chopped bell pepper
- ◾1/4 cup finely chopped onion
- ◾1 Tbsp butter
- ◾1 cup shredded mozzarella cheese
- ◾could use small 1/2" cubes
- ◾a sprinkle of red pepper flakes (optional)
