Lemon-Rosemary Chicken Thighs

- 6 bone-in, skin-on chicken thighs (about 2 lb.), excess fat trimmed
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 tablespoon minced fresh rosemary or 2 tsp. dried
- 1 garlic clove, minced
- Salt and pepper
Crockpot Applesauce BBQ Chicken

1.Spray Crockpot with non-stick cooking spray, or use a Crockpot liner for easy clean-up
- 4 boneless skinless chicken breasts
- 1/2 t ground pepper
- 2/3 cup chunky applesauce
- 2/3 cup BBQ sauce (I used Brown Sugar/Hickory)
- 2 T brown sugar
- 1 t chili powder

Combine chicken broth, teriyaki sauce, brown sugar, soy sauce, sesame oil and garlic cloves in large bowl
- 3 chicken breasts, skinless and boneless
- 1/2 cup chicken broth
- 1/2 cup teriyaki sauce
- 1/2 cup brown sugar
- 5 garlic cloves, minced
- 1/4 cup soy sauce
- 1 tsp sesame oil
- sesame seeds
Creamy Mashed Potatoes

Preheat the oven to 350 degrees F
- 2 sticks butter, softened, plus more for pan
- 5 pounds russet or Yukon gold potatoes
- One 8-ounce package cream cheese, softened
- 1 cup heavy cream
- 1/2 to 1 teaspoon seasoned salt
- 1/2 teaspoon kosher salt
- 1 teaspoon black pepper
{Easy Anytime Dinner} Chicken Marsala

Instructions plit each chicken breast through the middle to make 2 pieces
- 2 skinless, boneless, chicken breasts
- salt and freshly ground black pepper
- 1/2 cup all purpose flour or corn starch for gluten-free
- up to 1/2 cup olive or vegetable oil
- 8 ounces container of mushroom, sliced and cleaned
- 2 tablespoons butter
- 1/2 cup sweet Marsala wine

- 2 teaspoons salt, divided

- 2 tablespoons butter
- 1 cup chopped sweet onion
- 4 garlic cloves, pressed
- 1 (14.5-oz.) can petite-diced tomatoes
- 2 tablespoons drained capers
- 1/4 cup crumbled feta cheese

Place all the ingredients into the blender, add ice (optional) and blend until smooth

- 1 small frozen ripe banana, peeled
- 2 cups baby spinach
- 1 tbsp Better n Peanut Butter
- 3/4 cup unsweetened vanilla almond milk

Cilantro Lime Chicken w/ Corn and Black Beans

Take ingredients and split everything into two containers
- 6-8 Boneless, Skinless Chicken Breasts (I used 2 Costco Pouches per bag)
- 4 Tbs Olive Oil
- 2 + Limes, juiced (I like a little more lime then the recipe calls for)
- 2 Cups Cilantro
- 1 large bag of Frozen Corn (or two smaller bags)
- 4 minced Garlic Cloves
- 1 finely Chopped Red Onion
- 2 cans of Black Beans, drained and rinsed
- 2 tsp Cumin or Chipotle powder
- Salt an Pepper to taste

Step 1 Heat 1 tablespoon olive oil in a 10-inch nonstick skillet over medium heat
- For the Filling:
- 2 tablespoons olive oil
- 1 medium yellow onion, thinly sliced
- 2 tablespoons unsalted butter
- 1/4 pound small fingerling potatoes, thinly sliced
- Coarse salt and freshly ground pepper
- 4 basil leaves, chopped
- 1 tablespoon chopped flat-leaf parsley
- For the Eggs:
- 12 large eggs
- 1/4 cup heavy cream
- Coarse salt and freshly ground pepper
- For the Topping:
- 3 ounces fresh goat cheese, cut into 6 pieces
- 2 ounces Parmigiano-Reggiano or Asiago cheese, finely grated (1/2 cup)
