Heat 2 tablespoons olive oil in a medium skillet over medium heat
- 4 tablespoons extra-virgin olive oil
- 2 heads endive, quartered lengthwise
- 1 teaspoon sugar
- 1 small red onion, thinly sliced
- 1/2 cup prepared roasted peppers, drained and roughly chopped
- 1 clove garlic, roughly chopped
- 1 15 -ounce can cannellini beans, drained and rinsed
- 1 cup low-sodium chicken broth
- 1 small sprig rosemary, chopped
- 4 6 -ounce halibut fillets, with skin
- Kosher salt and freshly ground pepper
- 1 handful fresh parsley, torn

- 1 32-ounce 1 32-ounce 32-ounce box chicken stock
- 3 3 3 cans white beans, left undrained
- 5 5 5 cups cooked chicken (whole rotisserie or boiled/grilled)
- 1 16-ounce 1 16-ounce 16-ounce jar salsa
- 1 8-ounce 1 8-ounce 8-ounce block pepper jack cheese, grated
- 1 1 1 Tablespoon ground cumin
- 2 2 2 cloves garlic, minced
- to or white pepper to taste
- 1/2 1/2 1/2 cup finely crushed corn chips (optional, if you like your chili thicker)

- 1 red or yellow onion, chopped
- 4 jalapenos, stemmed, seeded, and chopped
- 1 lime, juiced
- 1/2 cup cilantro leaves chopped
- Salt
- Pepper
- If you prefer a little less heat, reduce jalapeno's to two. More heat, add a hot Thai chili pepper or Serrano pepper.
