Heat broiler. Line a broiler-proof rimmed baking sheet with foil
- 1 navel orange
- 1 lemon
- 1 cup(s) couscous
- 4 small (1 1/2 pounds total) tilapia filets, quartered
- 2 tablespoon(s) no-salt Cajun, Creole, or blackening seasoning
- Kosher salt
- Pepper
- 3 scallions, finely chopped
- 1 tablespoon(s) olive oil

Make the crust: Preheat the oven to 350 degrees F
- For the crust:
- 1 1/2 cups finely crushed chocolate wafer cookies (about 28 cookies)
- 5 tablespoons unsalted butter, melted

- 1 (3 pound) whole chicken

- 3 quarts cold water
- 2 cups finely diced onion

- 1 medium sized spaghetti squash
- 1 tbsp butter
- 2 1/2 tbsp flour(whole grain is fine)
- 2-3 cloves of garlic, very finely minced, grated or pressed
- 1 tbsp cream cheese(low fat is fine)
- 1 1/2 C milk(low fat is fine)
- 1 C freshly grated, not packed Parmesan cheese(about 60g or 2.1oz)
- 2-1 oz plus 2 tbsp extra for topping
- 1/4 tsp salt
Chocolate Fudge Earthquake Cake

Preheat oven to 350 degrees; grease a 9x13" pan
- 1 box Chocolate Fudge Cake Mix (plus the ingredients needed to prepare the cake)
- 1/2 C butter
- 8 ounces cream cheese, room temperature
- 1 tsp. vanilla
- 2 C powdered sugar
- 1 C semi-sweet chocolate chips
- 1 C coconut

- 2 cups self-rising white cornmeal mix
- 3 tablespoons sugar
- 1/4 teaspoon pumpkin pie spice

- 2 cups cooked mashed sweet potatoes (about 1 1/2 lb. sweet potatoes)
- 1 (8-oz.) container sour cream
- 1/2 cup butter, melted
