Tuna Patties

- 4 5-oz. cans chunk light tuna in water, drained
- 1 4-oz. sleeve saltines (about 40 crackers), crushed
- 2 large eggs, lightly beaten
- 1/2 small onion, finely chopped
- 1 rib celery, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon pepper
- 2 tablespoons olive oil
Butternut Squash Pie

Preheat oven to 450°. Unroll pie crust into a 9-in
- Your favorite pastry for single-crust pie (9 inches)
- 3 large eggs
- 1-1/2 cups mashed cooked butternut squash
- 1 cup fat-free milk
- 2/3 cup fat-free evaporated milk
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- Sweetened whipped cream, optional
Pumpkin Cheesecake

Heat oven to 300°F. Spray 9-inch springform pan with cooking spray
- Crust
- 2 cups crushed teddy bear-shaped cinnamon graham snacks (from 10-oz box)
- 1/4 cup butter or margarine, melted
- Filling
- 4 packages (8 oz each) cream cheese, softened
- 1 1/2 cups granulated sugar
- 4 eggs
- 1 cup canned pumpkin (not pumpkin pie mix)
- 2 teaspoons pumpkin pie spice
- 3/4 teaspoon ground cardamom
- Spiced Caramel-Rum Sauce
- 1/3 cup packed brown sugar
- 1/3 cup light or dark corn syrup
- 2 tablespoons butter or margarine
- 1/3 cup whipping cream
- 1 tablespoon spiced rum or 1/4 teaspoon rum extract
- Garnish
- Sweetened whipped cream, if desired
Eggnog Cheesecake

Preheat oven to 325 degrees F (165 degrees C)
- 1 cup graham cracker crumbs
- 2 tablespoons white sugar
- 3 tablespoons melted butter
- 3 (8 ounce) packages cream cheese, softened
- 1 cup white sugar
- 3 tablespoons all-purpose flour
- 3/4 cup eggnog
- 2 eggs
- 2 tablespoons rum
- 1 pinch ground nutmeg
Salmon Tacos with Pineapple Salsa

Arrange oven rack in upper third of the oven so the salmon will be 2- to 3-inches below heat source
- 1 (1 pound) salmon fillet
- 1 teaspoon chili powder
- ¾ teaspoon salt, divided
- 1 tablespoon plus 1 teaspoon extra-virgin olive oil, divided
- 1 (9 ounce) package coleslaw mix (5 cups)
- ½ lime, juiced
- 8 (6 inch) corn tortillas, warmed (see Tip)
- ¾ cup purchased pineapple salsa (see Ingredient Note)

- 2 1/2 cups unbleached all-purpose flour, plus up to about 35 grams 1/4 cup more, if needed
